See the updated cooking instructions below for this reverse-seared air-fried steak recipe.
Air Fried Steak Updated Instructions:
1. Use a Steak that is at the very least 1 3/4 inch thick, 2 1/2 to 3 inches thick is ideal.
2. Preheat the air fryer to the lowest heat setting, Mine went to 265 but 250 would be ideal.
3. Air fry Steak until it hits an internal temp of between 95-100 Fahrenheit turning once halfway.
4. Remove Steak and crank up the air fryer to 400 Fahrenheit as steak rests for 6-8 minutes.
5. Place Steak back into the Air Fryer and cook until the internal temperature reaches 125-130 F for medium-rare, For Medium pull it around 135 Fahrenheit. Allow steak to rest for 10 minutes before slicing.

I’d rather see a video where you are making “mistakes” , as we learn not only what works but what doesn’t at the same time. I also appreciated the little things such as even talking about washing your hands. So many unspoken things you would learn in person by observing but are skipped over in polished videos. Well done!

You and Sam The Cooking guy are my favorite chefs/home cooks on RU-vid. My fiancée and I binge your channel whenever you decide to upload or if we miss a few lmao Your channel is severely underrated. RU-vid doesn’t push notifications as well as it should. I hope you blow up again out of nowhere my guy. Also, I appreciate you using things from previous videos/not being wasteful. Also, not always going way over the top boujeé like other RU-vid cooking channels do. You actually make things that look fantastic and use ingredients that aren’t a tad difficult to find. You keep it respectful and you’re great to watch. Happy mf holidays brother.

Honestly this was cooked to absolute perfection 10/10 amazing (only missing our beautiful sear) just follow the updated instructions I posted in the description and let me know how it goes for you!

I cook air fry steak often in my RV. Mine does sear a little better than yours did. I found pulling at 80⁰ is what it takes. Also, since there is no basting, I melt herb butter in the air fryer in the first part of the cook and rest the steak in the melted butter while waiting for the temp to rise to 400⁰. I also salt a touch after slicing. We love you man!

This was fantastic. Like others have said, it’s great to see you doing an experiment like this in real time. It’s so much more helpful than having a perfect recipe ready to present. I’ve seen a few other RU-vid chefs do the same thing and what you all have in common is that you are professionals who love what you do.

This is basically how I cook my steaks all the time. My toaster oven style air fryer goes down to 250° at 110° I start a small cast iron pan on high heat so by the time the steak hits 120° my iron is ripping. Sear the cap then the sides and let rest 5 minutes. I also cook up whole button mushrooms while the steak is in the oven and I have my pre-made zip sauce to put in top, but I do add the pan juices and resting juices too them too. Only difference next time, I will use your rosemary salt. I'm excited to try it. I do occasionally butter baste with fresh rosemary, sage & thyme and adds great flavor but steak mostly doesn't need it. It's just something different to do.

Sous vide for an hour at 100. Then high temp sear in air fryer until about 5-10 degrees lower than desired internal temp. It comes up afterwards as it rests (which I learned from watching this amazing channel)

You could always put a flat metal or iron pan in the in the air fryer and whack the heat to max (whilst the steak is coming up to temp after the main cook) and then use the insanely hot pan to sear the steak after with the lid off so you aren’t actually over cooking it.

My 1st try at this went very well. Ninja Foodi Grill. Grilling at lowest setting brought temp about 225. Brought steak that had been Kraft Marinated to 98 degrees. Pulled it for 8 minutes & reset Foodi Grill to highest grilling temp & preheated to whatever temp that was. The steak was up to 125-127 in less than 2 minutes I think. Glad I checked the temp, thought is would take longer. My Foodi Grill does not have a probe. Anyway the steak turned out to be about as good as I have ever cooked in the Foodi Grill. Steak was tender & virtually medium rare throughout. 5-stars from me for sure. 1st time to use one of your recipes. Thanks. Going to do it all over again for a second time today.

In terms of convenience, it’s hard to beat this method. Although I think I would let the steak rest on a plate with some butter rather than the baking sheet with the grate, just to save some of those juices. Not that your steak needed it 🤌

Obviously you couldn't do this because the challenge was to be 100% air fried, but what if you seared it by the hot pan on high heat for about 45 seconds each side and then threw it in the air fryer. Would it come out with the way you think you would want it?

I would be more into doing it the other way around meaning If this wasn't a challenge I would have simply seared it in a pan afterwards

@@thatdudecancook but wouldn't you be worried about over cooking it at that point? Say if you see her at first you already have the internal temp after your sear that way you can be more pinpoint with the air fryer. Meanwhile the other way around once you take it out of the air fryer and you sear it you have to wait till the serious done take it off and you can't account for that temperature getting out of control. I'm just a novice but that's my thought process but I would love to know

Well ... if I had a ribeye on hand I might try this. My airfryer will dial down to 180 degrees and I have an elevated "grill" accessory that would put the steak less than 4" from a 400 degree burner. I must vouch for the rosemary salt recipe - ru-vid.com/video/%D0%B2%D0%B8%D0%B4%D0%B5%D0%BE-qtwS9ahNZxY.html - it is amazing. I'm on my second batch. My wife likes it too. You can get different textures depending on the salt used. On my first batch I used Kosher salt. The second batch I used Maldon salt. Both taste delicious. When I used Kosher salt I found the salt to grind too fine for my taste. It was almost powder. With the Maldon salt I ground the spices first and then added the salt. The color was greener, but I had better consistent salt particles and spices. I don't know if I am doing something wrong. However, the taste in the food is spectacular. Also, as stated don't add too much garlic. Stick to the recipe; it is awesome. I find myself salting everything with rosemary salt, steak, eggs, veggies, fries, etc. It makes everything taste better.
