I love that you give acknowledgement to God at the beginning of your videos, I smile everytime. It's been a slow week or two of preserving for us. I did get a half dozen jars of strawberry applesauce done and caught some jumbo tp in stock online at Sam's and got it ordered. Watching your videos keeps me motivated to keep stocking what I can when I can. Thanks and God Bless!

My favorite way to preserve zucchini is to make bread & butter pickles, I add carrots, onions and peppers to it

Weird weather here in MT has changed our garden as well, the raspberries are just starting and typically they are finishing off by now. We're also fighting LOTS of grasshoppers, they're eating my lettuces, kale, chard, that I left to go to seed( for seed collection) It's been a challenging year for sure. Canning green beans as well as we planted 5 varieties of dried beans too. All in all God's blessed us with bountiful crops of most everything and we're working hard to preserve what we don't eat fresh because who knows what the weather will be next Spring. Thanks for sharing Heidi, always fun to see your vlogs

That is the way to be. I keep trying to just focus on all the things that are doing well despite everything and be grateful even for a small harvest of things that normally explode. I am thankful that even those my tomatoes are JUST NOW starting to ripen and it is doubtful I will get much at all this year, I still have a very large amount canned and dried up and made into sauces and chilis from previous years and also on a huge score of tomatoes were given earlier this season so we are covered.

I just want to thank you so much for your tattler lid tutorial. I have been canning forever and 2020 pushed me into finally buying tattler lids. I jumped in by using 24 of the ez seal type lids in my last canning session. I only had one lid that didn’t seal. It was actually a better success rate than I have had with metal style lids this year!

I froze trout Dad (Lee's) gave us. He's retired so he has time to fish. Lee's and my son Daniel prefer to cook the whole fish in the oven. I also like fish braised in water, vinegar, onion, garlic, and ginger or boil it in water with some vinegar and/or seasonings. Daniel though prefers the crispy skin from the oven method so I mostly cook it that way.

This week I froze some corn and dehydrated some zucchini. Thankfully, I didn't dehydrated too much zucchini because I decided to season it with liquid aminos and lemon pepper and it was just ok. It was a good reminder to preserve in a way that the item can be used in several different ways, like your meatballs. BTW, the canning meatball idea is awesome! Thanks for sharing

Bless you Heidi, you answered a question I've had about catnip flowers. We had our hottest July on record with temps close to 100. But now we have a break - it was 61 degrees this morning and I think the hottest weather is over. From now on, I'm trying to keep the grand solar minimum in mind when planting and choosing veggie varieties. I am in full blown preserving mode with the summer garden. This weekend, I laid out the plot for the fall/winter cattle panel hoop tunnel greenhouse, which will be about 7ft wide and about 66ft feet long. Planting begins in early September!

I was overloaded with cherry tomatoes so I dehydrated them. I have been harvesting my Roma tomatoes and putting in the freezer until they’re all ripe, then will can. Harvested my carrots in 2 five gallon buckets. I got about a pound of small carrots. We’ll eat those fresh. Best of all 3 of my 6 pullets are now laying! ♥️👍🙏😎

I was dehydrating blueberries last week and the dehydrator gave out so I ordered a new one that should be here by the weeekend. I have lots of frozen veggies and need to dry them. Hurricane season is ramping up so I need to get everything out of the freezer. Saturday we lost electric twice during a mild thunderstorm. It was only for a few moments but it reminded me to get ready for more to come. Lost everything three years ago during Irma right after my monthly shopping and it won't happen again. Totally off subject...I watched your video about using family clothes and decided to try it. I bought some flannel and cut it up, put it in a little basket in the bathroom and love it. Thank you for all the great info you have on this channel.

Hi there, Heidi. Thanks for the meat loaf tip. I am canning veges, fruit, meat, one jar meals,, dry goods. I use the frig for storage like you use a freezer. I am concerned about power outage in the summer. In the winter, I can store it in the shed. It stays locked. Be well. Tonza in rural Georgia.

A house we used to live in I had scarlett runner beans and loved them. We didn't save seed and I haven't been able to get any locally. I put some on my mail order list. It's so hot here the only thing left producing is thai long beans, watermelon and the tail end of my cherry tomatoes. We didn't get many fresh summer squash our pest pressure was horrible this year. It has been a very wierd year here it is the middle of August, 103% and no okra yet.

Our weather has been weird ! But so far thing's are doing good, thank God. First picking of cucumber's = 19 quart's. Have 8 quart's of been's to can tomorrow. A bushel of zucchini to can and dehydrate. Got a small amount of peas, hoping for more tomorrow. Tomatoes are starting to ripen and pepper's are coming on strong. Winter squash is very slow this year. Thank's as always for sharing. Stay safe and healthy. God bless

Always a pleasure and a learning time, thank you, Heidi. I am thrilled to have dried a lot of basil, and pout up, but, so much! So I just chopped some, put it in freezer trays, covered with avocado oil, and froze, hoping that works well, as then I will make little herb 'bombs' from all my herbs, not too many this year though, my lemon balm stopped growing early, and has just now decided to take off, odd weather this year, for sure. I grew some chinese long beans first time, I love them! Pretty flower, and great harvest. My green beans quit early, so these have helped add to my diet. Thank you again, your help has been awesome, using what I grow, I am still using the apple cider vinegar I made from your video from last holiday pie time : ) may God continue to bless you and Patrick.

My lemon balm does that every year. It is often the first mint to really start growing but then has such a short growing period. Far shorter than any other mint. For some reason it held out a little longer than usual this year. I almost wonder if it prefers the cool weather more than the other mints do

I am canning chicken today. I make homemade food for my dog Sadie, and I only have a tiny freezer ( but have a freezer on order) we have done a pretty good job stocking up for the people in the family,, so now getting some stores in for the animals

Sorry about the wonky weather up there. We adore your area and have visited many times, the berries are amazing especially the farther northwest we go to the park beyond the reservation. We always stop by the museum there too as hubby is an archeologist. Meanwhile in AZ it’s the hottest year in our lifetimes...I’ve had to put tipis of shade cloth over the plants... my cucumbers are burning! 99 in the shade and 100 + out in the sunlight...So are the tomatoes, ever seen a tomato with sunburn? And finally the monsoons started ( a month late ) and the storms are from a completely different direction and just fierce! We had three fires start from lightning nearby, fortunately the FS is on it and got em tamped quick! God bless you Heidi. You’re a sane voice in wacky times.

I finished harvesting all of the jalapenos and banana peppers and pickled them. I've got contender bush beans to harvest this week and I am going to try to slice, bread and freeze some okra so it will be ready to go right into the fryer. This is my first year with okra so it has been a slimy adventure! :D

If you peel and seed zucchini, then cook in pineapple juice , dry, taste great, and you can use all the pineapple juice over and over.

Like most everyone else, our garden is later producing this year. Our peas did exceptionally well and we got over a bushel off of our rows. That equated to over 3 gallons shelled and frozen. My tomatoes are just now ripening, and tomatoes are a staple for us. Lots of other vegetables did well, too, but some varmit got every single watermelon we had! Oh well, we can live w/o watermelon. Btw, I've loved my dehydrated ground turkey (can't eat beef) cooked in water (I have a video on doing that) and dehydrated on cloth liners. Thanks for that idea! Much more that I could say, but will just add that I look forward to your videos.

Yep, same here on the tomatoes. I should have had quite a bit by now of my tomatoes that take longer to mature but have so far only got five of the ones that mature the quickest.

Haha, that part where Patrick was making faces at you was cute! I'm dehydrating tomatoes, peppers, and so much squash! My zucchini has been a flop. I started some more this morning in the hope that I can get more. I got some hybrid straight neck squash seeds from the feed store and MAN those things are prolific! They way outperformed the heirlooms, so I'm going to stock up some of those seeds, but still keep growing my heirlooms.

That is the benefit of hybrid is they put out a lot so it is wise to purchase up a lot of seed on such things. I did just pick a bigger zucchini than the one in the video and looks like I may end up with several more after all. Thankfully! If nothing else though, the plants look impressive in the front yard! :D

Very nice job. Our Zucchini came all at once even though we planted it a week apart for three weeks. It's done now. I will try the meatball canning. I lost a freezer last year and cost me about 400 dollars worth of stuff. Thanks for great video's. Make some faces back at Patrick.

Thank you, Heidi. I ALWAYS enjoy your videos. I planted some scarlet runner beans in the kitchen patio garden. I can see one trellis out the kitchen window. I can watch the bees and hummingbirds at times. There’s only one problem, the blooms are there, but no beans. What’s up with that? Any ideas? Our beans aren’t doing that well. We planted rattlesnake beans in the garden. They’ve been coming off very slow. Nothing canned yet. Tomatoes are slow, so bagging and going into the freezer to can after the grandkids go home. That’s when I will get busy.

I find that with all of my beans, the first flowers that come on never set beans but as the plant matures, the flowers that come on later produce well. My tomatoes are also WAY behind! Even though my plants are healthy, it looks doubtful I will get much. Only picked five or six of the smaller ones so far (vernisagge)

My zucchini was slow this year also. I actually had to hand pollinate the only ones that I have harvested. My daughter gave me some of hers, so I have enjoyed having some. Weird year, indeed.

I was hand pollinating too to make sure and even those were not making it. We really needed that warm weather. We did get a couple hot days in a row right after this video and I got two more good sized zucchini but today is cool again

This weather has been crazy! We are about two hours down the coast from you, and we finally got into the low seventies on the weekend. We've only gotten about a dozen or so zucchini, and only two tomatoes have ripened, so far. Not one pepper has set fruit. We did okay with the spring season crops, and I've started seedlings for fall, since summer is being so fickle this year.

We have only had a handful of tomatoes so far (the small ones ripen first) and am finally seeing a few of my chili peppers forming but highly doubtful I will get enough to do much but save for seed

As far as canning it, I believe the main question would depend on what it is made out of. For example, technically speaking, you are not suppose to can breads of any kind, not even noodles. though I personally wonder how far all this reaches as I know many people who can breads in various ways

Heidi, wow look at all those meat balls! I am going to give it a try too. Heidi, we are having the same problem with our garden! we only had one zucchini, and our plants are dying, so is our yellow dying and no fruit. We have winter squash and it is dying off. Cucumber are done, pulled those yesterday and so we pulled some of the zucchini, and yellow squash. This is horrible year.

This is off topic, but I just finished fermenting a jar of fruit Kvass. Since it only ferments for a few days, instead of throwing the fruit in the compost after straining, I decided to see if I could reuse that fruit to make vinegar. I added a little orange and lime peel I had in the freezer, and then added water and sugar. Figured it was worth a try and if it didn’t work, I was only out the water and sugar. Have you ever tried doing anything like that and had success? I would love to get both from the fruit. I started using ACV to wash my hair this last week, and LOVE it, so need to get some homemade vinegar made to use. Hoping I can get a few roses still this year to make a batch or two as well. Thanks for all you do, you are appreciated. ❤️

I made fruit sodas but usually they are more of a fermented fruit smoothie so the whole fruit gets used so I do not have anything to toss into making a vinegar. I have used the beets from beet kvass to do other things with (eat raw or dehydrate up to make a colored powder). However, the fruit shoudl work fine in making vinegar.

I made a tincture of what I thought was echinacea leaves and flower buds. When the plant bloomed, turned out to be Black-eyed Susan! Do I throw it out? Thanks for all you do for us!

For a meatloaf do you cook as normal and then can.

Never done meatloaf myself but I would think you would just make it up and put it directly in the jar as is, it will cook in the canning process.

Patti per Gail Damerow, (long time Countryside & Small Stock Journal writer from time when Ballinger ran it) article: Presto put qt of water in canner, vent canner, & bring pressure up until pressure regulator jiggles. If needle on dial is pointing to 15 psi, its accurate. If gauge is off less than 2 psi in either direction, compensate by adjusting pressure(increase if gauge reads low, decrease if reads high). If gauge is off by more than 2psi, replace it. Or All American main function of pressure gauge is to show when canner has been depressurized @ end of processing. The processing pressure is accurately controlled by 3way pressure regulator, which does not need testing or replacement. Hope this helps. I keep articles like this in notebook dedicated to pressure canning. Actually, I do that with all my tools.Virgo,LOL. God bless.

This is one reason I love having a weighted canner. While there is a gauge and I do check it, it is the weight and how much it wiggles per minute that I go by. That is one thing that does not change

Just try making the meatballs as you normally would and can as is without adding liquid. I am going to try that with a couple jars with some other canning but I do not want to can a whole bunch until I try it first in a small batch

Never done it but I would just make the meatloaf, stuff it into the jars, then process pints for 75 minutes or quarts for 90 (pressure can). Some people may have other ideas but knowing how the meats are, there should be no need to add liquid

Hi 👋! Do you have a video or a list of what is most important to can /dehydrate for survival? Like what foods give you the best caloric values or biggest bang for your space? I’m just starting out and really scared. I just want to make sure we won’t starve to death 😢. I only have 42 jars and my food saver died last week so I can’t vacuum seal 😰. I was able to get that cool lid attachment and going to buy brake bleeder 💕. Trying to find Mylar bags also 🤞. What are those oxygen absorbers used for? I haven’t bought any yet. I’m sorry for all the questions 🤦🏻‍♀️. Thank you in advance and God IS good...everyday ☺️💕🙏!!

Sanity in a totally insane world! But my green beans are not bearing ...? My cucumbers and zucchini died. Tomatoes and peppers must be "rona"immune😂

Crazy year for sure. I do have two more nice sized zucchinis out there now and looks like I might still get a few more but it is so odd when last year I was overwhelmed with them

@@RainCountryHomestead even though I find the squashbugs and their eggs and get rid of them I think the vine borers get to my stems and then the whole plant wilts - I do not compost those anymore, they go into a trashbag -really odd for me :) but I have 2 new starts in a pot and I hope, hope, hope they will give me some zucchini yet; time will tell :)

@Susan Ladner watched some on the grand solar m. not saying I understand it all, but man when the sun is out it is HOT The butterflies are plenty this summer, all kinds of gorgeous, just found a big monarch caterpillar in the milkweed😚

I planted 6 zucchini plants and so far I only got 3 zucchini so far. This year was a disaster. Last year I had so many we got sick of them. Go figure.
