90 minutes for quarts or pints? I remember your Ugly Chicken is 75 minutes for pints and these meatballs are precooked.

I did the meatballs in quart jars but only for 75 minutes...do I need to toss them out? I did these a couple of months ago based on the video. I just now saw your comment about it being for the wrong amount of time. I was and still am fairly new to canning and didn't think to check with the National Home Food Preservation Center, like I do now.

Y’all have created a monster!! Me!!!! Between you and kneady homesteader, thrifty chic and prepper potpourri I am now a canner!!! I’ve done ugly chicken, chicken soup, beef stew, mushrooms in onion stock, chipotle black beans and doing pulled pork in bbq now!!! Not enough time to do everything I want!!!

I never knew I could do that. Oh the possibilities! Spaghetti and meatballs on the fly - right off the shelf. Pasta on the pantry shelf. Tomato sauce on the pantry shelf (add spices to turn it into sauce). Meatballs on the pantry shelf. OMG!

My MIL was a caterer...her career started after serving supper at her kids weddings. One of the most requested dishes was her meatballs. Now, I'll start by saying hers were freshly made and included cream in them. But she'd cook them for hours in a mushroom gravy. Oh boy, next visit, I'm going to ask her yet again what was in the gravy...we used cream of mushroom soup as a base for the gravy when we did them at home for sure. She loves getting asked cooking and gardening questions. At 86, she still loves teaching her talents to everyone.

Mushroom powder....you are brilliant! I have to try this because I assume the meat will become very tender and that means I can eat it. After gastric bypass many years ago beef is always a challenge unless it is fall-apart tender. Adding back more iron-rich food to my diet will make my doctor happy. Thank you, Leisa!

thank you so much. I thankfully had enough dried mushrooms to grind up and add to my meat. We got ground beef fresh for $1.99lb, purchased $33 worth. This gave us 9 meatballs per pint. (2 adults 1 teen=1 meal per pint) for $1.80 per meal/pint. What a blessing! I never would have thought to can meatballs but we love them as meatball subs (on hoagie), in homemade chili and spaghetti. All in one canning run! Whohoo!! God is good! Blessings to ya!

Leisa for the win AGAIN! I canned up a couple of test jars last week and then cooked them last night. We had them over rice with your homemade gravy mix added to the broth, and now I'm a genius to my family. Awesome superpower you've got there!

I know its like she read my mind. I started canning in 2020. The first thing that came to mind was canning meatballs. I am so glad her page came over my feed a few weeks ago. She is the best....somebody call the Food Network and get this woman a show. 😶

The entire time I was watching your video my mouth was watering. So I just had to grab a jar of venison meatballs out of the pantry, fry up some taters n onions while my wife made her delicious homemade biscuits to put that good ole gravy on. That sure was some mighty good eating!

Although I just started canning this past June, I have been canning meatballs every month since, and I also use the pint-and-a-half jars (so I can find them easier...as if the brown golfballs were not enough)! Lacking the skill to make them the same size and roundness though, I use a mini-ice cream scoop, so they all look very pretty in the jars, LOL.

Thank you for making me aware meatballs can be made without eggs,bread crumbs etc... I have fallen in luv with mushroom powder which I purchased at TJMAXX. I also ordered it from Amazon & coming today. Making them without carbs & dairy makes them very Keto which is how I have been eating for the past 2 yrs. I also canned up 30 lbs of hamburg in the past 2 wks. Thank you !!

Just put my own version of these in the canner. Half beef half sausage. Added dried onions, garlic powder and italian seasoning! Can't wait to try them!

Girl you have done it again! I will be canning these over the weekend! I learned from you to not be so anxious to pull things out of the canner when it's done. (5 mins)You are right the liquid loss is almost nonexistent!.

I added Kale powder into mine never hurts to have a few extra vitamins, thank you so much Leisa I have been wanting to make them and had not a clue how to do them and they be right. God Bless you and yours :-) I can not see paying 11.00 for 20 in a bag and all that extra junk in them that is totally not good for you. Thank you again

I’m doing this tomorrow. Meatballs are a keto staple. I have dried onions but no mushroom powder ( my dehydrator arrives tomorrow-so soon). I have some ground turkey to use up and I’ll add some beef to give it more flavor.

hey leisa just wanted to tell you i did raw pack some of my meatballs just a few jars and checked a jar and they did great good texture,i got sick while i was working on them so that was a quick way out for me.i thank you so much for all you do for all us canners.

I'm going to try this with ground chicken and chicken broth. (I have the alpha-gal allergy and can't eat beef or pork). They will make amazing chicken and gravy! And can some with tomato sauce for pasta dishes. Wonderful! Thank you!

I just canned 15 lbs of meatballs last night. Half were in tomato sauce the other half in beef broth. However, I didn't put mine in the oven to brown them. Maybe next time I'll will take the time and do that. I made my meatballs with Italian spices and made them sweet. 1001 things to make with meatballs. LOL :-)

Would be great to add you onion soup mix to beef broth And I bet you could come up with an instant mushroom soup recipe as good as your instant onion soup. Swear I’m turning into a canning nerd.

Hey Leisa! In case you were wondering, 7 1/2 lbs of ground beef will make 97 meatballs in 14 pints. I ended making 10 cups of beef broth. Lol lots of work but worth it!

Bought 9 lbs ground beef to make these up. Had planned to make them in marina sauce for canning, but i liked your idea of broth which will give more flexible. TY

Love canning meat balls. I can them in beef broth. I drain the meat balls saving the broth as a soup base or gravy starter. I then can tomato sauce seperately and also can sweet and sour sauce (without cornstarch thickener). This way I can decide what we feel like eatting and mix and match meatballs and sauces. Fast, convenient, and yummy.

@@Mickey-jn8hz I start with 1 1/2 c brown sugar. 1/2 c vinegar. One can pineapple chunks for the basic recipe. I taste and adjust till it tastes like I like it. This would be a recipe enough for 1 lb meatballs. Of course I make it much larger when I can it. Before serving I add a couple of tbsp of cornstarch to cold water or the canned sauce to thicken and then heat till hot and thick. Add meatballs and serve. Can't be canned wirh cornstarch in it. Thicken prior to use.

I’m sorry to keep asking questions but I’m just so new at this and SO EXCITED! I made two quarts of meatballs and covered with sauce. Do I can these two jars for 90 minutes? I will be canning them cool as I was canning chicken at the time and had to wait. SO since they have cooled, can I can these two quarts of meatballs with 4 quarts of roast that I have jarred up (at 90 minutes?)

I love using my meatballs for a meatball stew. Combine a can of, meatballs, diced tomatoes, canned potatoes, canned carrots and simmer for about 20 min to blend flavors. Ymm.

How awesome! I make an assortment of meatballs which I freeze. Lamb with mint, Asian flavour ones and Swedish Meatballs. Plan to make the ones you just did. Now to do the others without egg and feta? Thank you.

Brilliant idea! I absolutely love the idea of the convenience and possibilities this will allow us! I am curious how soft or mushy they will get after being pressure canned and sitting in the beef broth on the shelf a little while. I personally feel crumbled beef becomes too mushy for my liking.

Made a test batch of these meatballs after watching this video and they turned out dilish, I wounder if it's the mushroom powder that helped hold the texture better they didn't turn mushy like hamburger does when it's pressure canned? The first batch of meatballs I made a couple of years ago were awful and I said never again but this recipe really did turn out good I will be making a Large batch soon! Thanks for sharing.
