Hi and welcome back to The Kneady Homesteader Channel and today, we are pressure canning Beef Bone Stock in my 921 All American Pressure Canners. In my pot I have a mix of saved onion skins and celery ends that I keep in my freezer along with some whole vadalia, candy and red onions. Also added to my pot are whole peppercorns, sea salt, turmeric and a splash of white vinegar to help pull out the marrow. I have 2 beef soup bones in my pot from the cow we had processed and put into our freezer. I let this cook on medium low for 48 hours and now, it's ready to can in quart jars for 35 minutes (I use vegetable stock processing time) because I have added vegetables. 13 beautiful quarts are heading into my joyful pantry along with a quart of sterile water.

I do a strain of everything then let it settle for an hour or so and then the cheesecloth over the canning jar. I hate cheap cheesecloth, my local grocery store sold to a different company and not going to carry certain brands anymore they put carts full of stuff out everyday, free, had a ton of the good cheesecloth, you want to bet I got every one of them and a lot of other goodies, I can’t believe what they are giving away. Beautiful stock. Love that green canner.

Definitely going to be making beef bone broth but I think I might start with a chicken bone broth.we’ll use it more often than the beef. Thank you, Heather, for showing me the process. Look at those beautiful jars of beefy goodness. I hope mine comes out as good as yours!! ✌️❤️👍👍

I think a lot of people may not be familiar with what to put in the stock pot. I get a lot of bones from my cows that are butchered that don’t have a lot of meat on them. I use these along with some soup bones I get also. I put in onions, celery, peppercorns, turmeric, garlic powder, opinion powder and bay leaves. I put mine in a roaster and cook it for at least 24 hrs. I strain it through a tea towel.

Very nice, sister. I just strain my broth through a colander and then use egg whites & shells to clarify my stock. It's a little easier and less time consuming, imo. Blessings on you!

Hey Heather… Looks so good. I can’t believe that your canner can double stack quart jars. I don’t know if you got the video I sent you about an alternative garden fertilizer to get rid of bugs and increases garden growth with table salt, urea and brown sugar. I don’t have a garden but I thought of you when I saw it. 😊👍❤️

No never got anything? Sounds interesting! I had no issues with bugs though, thankfully. Only with rabbits and chickens 😆😆😆😆 No my canners do not double stack quarts. Just one layer. Each canner fits 7 quarts. I had to run both of my 921’s. 🥰

For people who do not have extra jars to can water, just fill a jar of water and do not put a lid nor rim. You just need a jar to hold space in your canner, no need to waste a lid and holding a jar hostage if you have enough water reserved.

Hi Heather, if we happen to have a stockpot with a strainer pot inside ( the slotted one ) might be a good idea to use that to separate the chunks and a glass beaker ( measuring jug ) to scoop out the liquid to pour into the jars. Would you agree !? just a thought . Loved watching this! thanks for sharing.

You could try it. I use to remove the chunks of veggies but i find movement makes tour stock cloudy. So, the best results I have found for a clear stock when they come outta the canner is to not disturb it. If you did it the way you described I would let it sit and rest for an hour or two and let the sediment go to the bottom. Scoop from the top. Hope that helps. 😆❤️

How much turmeric do you put in your stock? I take a turmeric supplement because of my terrible arthritis and I would love to add it to my stock. Thank you for the music you choose. It really ministers to me. Love you.

I'm a newbie! When you fill the quart jar with broth what else do you do? It's not one and done? You had mentioned broth is good for 3 days but can freeze for 6 months.

Yes if you stick it in the fridge to can later or for the fat to rise to the top so you can take it off, do not let it sit in the fridge for more than 3 days. You can freeze it for up to 6 months if you choose not to can it.

I noticed you did not add additional water to cover the lids so me being a newbie does that mean the water only goes up to the metal rim and not to cover?🌻

The water level will be different than your water bath canner. When you water bath, you MUST cover the jars at least 1” of water over the lids. Pressure canning is different. And it will depend on which pressure canner you use. For the All American canner it’s 3” of water before add in your jars. The water level at that point doesn’t matter where it ends up.

Does a cloudy stock taste the same or will the sediment in it make it more bitter?

It makes it more bitter in my opinion. You will always have a little bit, but usually with this method it will just be a bit of fat which adds no bitterness. Many people too will can this for “beef stock” time which is 25 min. But that should only be done if you are canning beef stock with no veggies added. Once veggies are added it should be canned for vegetable stock time which is 35 min. That also could be why some people struggle with their stock not tasting right.
