I have been living a permaculture lifestyle in northern Quebec for 18 yrs. I follow your posts and am so delighted to watch your progress. Winters are long but gardening is life. When we began this lifestyle no one understood us. Documenting your journey pleases me, we have VSH tapes, we are in our 50ies now!!
You guys should learn how dehydrate thoses morrels. They come back fantastic in milk, very ideal for how I've seen you guys cooking with them. Keep up the good work. loved your orchard videos.
make your own balsamic glaze. 1 cup port wine (the cheap stuff), 2/3 cup balsamic vinegar, 1 cup sugar.. heat over medium heat to reduce to desired thickness. Some folks add herbs and such, there are a bunch of recipes out there, but the plain reduction is great drizzled over some aged parm cheese
You should have a cook book! I forage a lot of my own foods and such. I live in WA State and am constantly teaching myself new things about what Mother Nature has to provide for us. You guys are amazing and such an inspiration. Maybe a list of books you read or some recipes? I would love to know both if you're willing to share

Agreed! I live on a property right on a large river 16 years now and counting and before I added several bat houses on trees right at the river I could never sit down by the river and relax without tons of spray on, citronella candles etc. --
I agree. I had several at my former property out in the woods and I was rarely bothered by mosquitoes as the bats were feeding away. The small investment = priceless outdoor comfort.

A nursing mother bat eats the most - sometimes catching more than 4,000 insects in a night." You have a great set up for a few bat houses 100 or so metres out in the bog around your property...

I need to move to Alaska. I spend a couple days in Anchorage as a layover on my way back from Okinawa and I loved it. While there some friends and I climbed flat top and left our stack of rocks. My wife made 14 pints of strawberry jam over the weekend never tried rose petal jelly. I use wood chips that they sell for pet bedding in my smoker.
Hi guys, finally I found in this video how to cook bagel (sour dough) in water and then bake in the oven, what I asked you. Maybe the recipe is a simple sour doug... I will try it, thank you very much. Anyway, we, my husband and me, continue watch your episodes every evenings and really enjoy what you do all together in the garden and in the wild life too. Rose hip syrup is well worth making too for that fabulous delicate Turkish Delight flavour. It makes a fantastically refreshing drink diluted with water and is a great source of winter vitamin C.
