Rosered Homestead on RU-vid did a very good test on several electric canners, using a probe that measures the temps inside the jar of food to make sure the canners were producing high enough temps for the food being processed was in the kill zone for the amount of time required. The Nesco 9.5 qt. Passed this test. I would trust it. The lady testing the canner is a professor as well and follows canning procedures safely.

On RoseRed homestead the owner has proven the Nesco Carey canner is safe for canning at high pressure using a data logger. After seeing this I bought the digital canner and that’s why I am watching your channel ❤
I just found your videos, and I do enjoy them! We seniors have got to stick together so we can lead the younger sisters in canning! I am looking for meals in a jar mostly, because I live alone and do not like cooking for only myself unless it is in big canning batches! I really enjoy your recipes, please keep them coming!
The butter stick I'm currently using is on the counter, while the rest of the butter is in the refrigerator or freezer. Love these recipes!! I'm loving your measuring spoons!!! They are beautiful!

I wish people would stop saying it is not approved. They DO NOT test or approve canners, they have a list of standards/guidelines of safety features that a canner should have. Love your videos.

When I first started sharing Nesco canning recipes I had several people tell me they were glad they were not members of my family because they thought I would kill them. I always felt that a company would not release a product for large markets if they hadn't tested it for after. Almost two years into using the canner Rose Red Homestead, a scientist, did her own independent testing of the canner proving it reaches the temperatures and pressure needed for safe canning. I realize you did this one a while back but you said the magic words - vegetable beef soup and biscuits - plus I need to gain confidence in using my Nesco Smart Canner -- I really want to get at least two dozen jars of various soups and stews on the shelf for the winter - I live alone and a pint will make 2 meals for me. I will be watching more of your videos to gain that confidence.
Thank you for your wonderful videos. We live in the White Mountain area of Arizona, elevation 5,660 feet. So it is very important that any low acid food we can must be processed at 15 pounds. I love the tomato paste in a tube. I always struggled with that to do with the remainder of the can when almost every recipe calls for only a couple of tablespoons of paste.

I'm using it (and making videos using it) anyway. :) I think your videos are what introduced me to the canner, and I'm thankful for that.

There are so many things here in the US that have been used, some for generations, that are not "USDA" approved. These range from foods to jars and lids - We call this "Rebel Canning." Honestly, the USDA does not give me warm fuzzies. Using common sense and following established, approved lessons should be followed exactly while learning, but once you have that knowledge, apply common sense. Works for me.
We may not have been prepared for this mess,, but we sure GOT prepared awfully quick! Now that our canning skills are up to date, we can stay WELL prepared now! I just found you and enjoyed your content immensely! I will now be a steady customer of yours.
I learned so much from this. I have never heard of a Nesco canner before. It would sure beat those great big canners that you have to fill with water and drag off the stove. I really like the idea of something small and easy to use. The soup looks so good, and I never turned down a biscuit. Thank you.

My husband and I drove over the road for 13 years I canned food and baked for our truck life when we were home and carried a crock pot and electric skillet as well as a lunch box stove so we could be somewhat healthy if I had known about canning at the time I sure would have done that now we are retired and I can dehydrate and power I love thanks for your videos

Wow... I don't know if I've ever been first,lol... I love having soup on the shelf, such an easy meal. I think you would know more than anyone if your jars are good and sealed. I've heard good thing good things about the Nesco canner. Everyone should do their own research on everything they can. What's good for someone might not be good for me or vice versa. I use the paste that comes in the tube. It's so easy. Especially when you only need a few tablespoons. Wow that actually went pretty quick.... I qualify on the lazy side every now and then. But I don't mind canning broths for how many days it takes and have it for the year. I do both? lol We haven't really run out of anything here. When I see something I but it. The flats for sure. Dollar General had them I picked up 12 boxes. I thought that canner only held 4 pts.. That great is holds the 5. It holds 4 qts right? Nope my butter is on the counter also... I love cooking with the butter milk. Add you honey to your butter milk it will mix in easier. I have those same collins glasses your cutting the biscuits with..lol. I love drinking juice out of them. I’d like to use chicken broth or stock in my soups like hamburger soup onion soup in a few other things it doesn’t overpower the vegetables like a real heavy beef stock would. I do you like beef stock when I making beef and noodles. Also, I like the beef stock when I am making beef stroganoff. Answering your question about butter, we keep our butter on the counter that were use it out of. I do have several sticks in the refrigerator. Just so I have them stable enough so when I want to put it on on the counter, I can. 😊
Colleen, I've just discovered your RU-vid videos, and enjoy them so much! Thank you for your thoughts on Carey Nesco...I have used one for the last 4 or 5 years, and appreciate it for the same reasons you gave. People here in US are in some cases, so scared of using one for canning; in fact, I've gotten booted from a couple of FB groups for encouraging folks to try one. Just finished 5 pts of dry pinto beans, and will be starting some "baked" beans this afternoon. Thank you for the time you spend to help people learn this very useful and economical craft! The hamburger vegetable soup is in the pressure cooker right now. The dry canned potatoes turned out great yesterday and I opened a jar today to go with supper. Even my finicky husband enjoyed them, so they're a win! 😀

I cook big batches of rice and once cooked I shrink wrap potions for the freezer. Especially brown rice which takes forever. Very convenient and it steams up quickly in the microwave.
Hi Colleen , your soup and Biscuits look delicious ! And I think you could even exchange the Hamburger meat for ground Chicken or even Sausage meat and make different versions of the soup snd if using Sausage maybe add chopped Kale or Spinach to the soup ! What do you think ? I thought of the Chicken because my son has Gout and isn’t able eat red meat or any processed foods because it will throw him into a flair up with his Gout and I don’t know if your familiar with this disease but it causes intense pain snd swelling in the affected areas that usually last for 1-2 weeks ! There is medicine that can be taken daily to help keep down the flair ups , but my son is allergic to some if the ingredients in the medicines so he can’t take any of them !! So I will make your delicious soup for him using Chicken and I know it will be delicious !! Thank you again for your delicious recipes , God bless ! ❤️🙏🙋🏻🌈🌈

So, I HAVE to leave you a comment. I suck at making biscuits. I have been known to waste an entire bag of flour in an afternoon trying to make an edible batch of biscuits. So I quit trying years ago. Last week, I found you while looking for a recipe to can hamburger soup. So, I canned some soup, and that evening I made chili and decided to try making your biscuits. They came out perfect! In the past week, my husband has asked for the biscuits at least 4 times, and this evening I made a triple batch. Thank you so much for the recipe :) They work for any kind of meal, and are also perfect for biscuits and gravy. My husband has even shared them at lunch at work and everybody loves them, lol.
Oh Courtney I am so glad to hear that you are enjoying that recipe. They are a favorite of ours and they freeze so well! I just cook them up put them on a tray and freeze them and then pop them in a zip lock bag. When you want to eat one just put it on a plate in the microwave about 20 seconds and it's just like they are fresh! All the best and thanks for watching! Colleen
I love my Nesco & my daughter bought one as well. Carey made them prior and they are now one company. Rose Red Homestead here on YT did a study on it and a few others. It was most reliable. (She’s a scientist/ college professor with multiple PhD’s. So I choose to trust her science.) I have always had good luck with mine and I’m still alive :)

I like your tutorials. Just wondering why you didn't wash the peppers (because of the sticker) And the celery. Celery always has dirt on it. Does that not matter for the canning process?

By watching your videos, I finally made the investment and bought a Nesco electric canner. A few years ago I purchased the Presto stove top canner. I still have not been able to use it...I am renting and we have a glass-top stove that when I called to see if it was ok to use the Presto canner on it, they didn't recommend doing so since it is an older model stove. I was looking into getting a portable stove burner to use the presto canner on, but I decided on getting the electric canner because it can do smaller batches and I don't have a lot of kitchen storage space. Im planning on buying a house in the next 6-8 months and want a kitchen with a BIG walk in pantry to can to my hearts content. Thank you for posting very informative videos. I look forward to starting my canning adventure.
Hello Blessed Gypsy, I have not had one bad experience with my Nesco canner. A couple of weeks ago I ran into a fellow I know who bought the Nesco about a year ago after watching my videos and he said his had died. I said "Oh no, I'm sorry to hear that" and he said don't be sorry I ran 600 jars through that canner and I have ordered a new one to replace it. I hope that you have the same kind of experience. Colleen I am going to try this as it is very similar to my Macaroni Soup but with beef in it. Fabulous !!! & your biscuits are called Scones over here & yes trying them as well. I've never seen tomatoe paste in a tube. How perfect is that! I just learned the Amish can al denta noodles in their soup. I'm going to try that. They water bath everything even meat. They have never heard of the FDA.
There are many canners out there that still water bath everything because that is the way they learned to do it from their mothers and grandmothers. Cheers, Colleen
Its the FDA is organization that your talking about. Your correct they just haven’t tested, but all reviews and videos I’ve seen about the canner are positive and good.

I have a couple of questions. 1) Does your Nesco manual say what the internal temperature is while canning ?? I have an 8 qt. Instant Pot & I need to compare the temps of the 2 cookers. 2) what produce/meats do you consider not suitable/safe for dry canning ??
1. The temperature in all "canners", including the NESCO, gets up to 240 degrees F, hot enough with time to kill all spoiling bacteria in food. 2. The Instant Pot is *NOT* a canner. It is a pressure "cooker" and never gets hot enough to kill spoiling bacteria. It has 3 temperature settings: 2A. Low - 180-190 degrees F 2B. Med - 190-200 degrees F 2C. High - 200-210 degrees F None of these are high enough to kill the natural bacteria that is in food that can cause the contents to spoil. Don't try to do pressure canning in a pressure cooker. You only get yourself and anyone else sick that eats from those jars.

Hello Barbara, I had to go back and watch it myself to be able to tell you. It was the meat browning in the pan. But at anytime you could here the furnace/AC or the dishwasher running. I get them started and forget to shut them off for filming. All the best, Colleen
