Canning "Maw Maw's Sweet Pickles" How to make Old Fashion Sweet Pickles. 100+Year old Recipe.

Try these sweet pickles you won't regret it. We had ran out a couple of months back and searched high and low for sweet pickles in the store and the one we found were horrible. They were the little small pickles sweet but had an unidentifiable taste that was not appetizing. My Pickles are crisp sweet and just awesome . Especially in Potatoe Salad and Chicken Salad. I even like them with my peas and cornbread, If you have any questions about this recipe or in the making of these pickles please don't hesitate to ask.

Recipe Sweet Pickles
7lbs of Cucumbers washed and Sliced in 1/4 inch slices
1 Cup Lime mixed with 2 Gallons of Water
(Mix 1 Gallon to 1/2 Cup Lime)
8 Cups of Vinegar
9 Cups of Sugar
1 Heaping TBSP of Pickling Spice
1 TBSP of Sea Salt
1 teaspoon of Red Pepper Flakes(Optional)
1 Gallon of Water to a half cup of Lime.. Mix well and pour over Cucumbers. Keep mixing this ratio until you have them completely covered in the lime water.
1.Use a plate with a jar of water to keep the cucumbers submerged in the Lime water.. The cucumbers need to stay in the Lime water solution for 8-12 Hours. I mix mine up the night before and let them sit all night long.
The next morning drain the lime water off of the the cucumbers and rinse the cucumbers at least 3 times to remove the Lime Water
Then cover the cucumbers in ICE and and add water until they are covered. The cucumbers need to stay in the Ice water bath for 3 hours.
Drain the ice water off and place the Cucumbers in the Pot that you plan to cook them in.
In another pot add your 8 Cups Vinegar, 8 cups of sugar 2 TBSP of salt and put the pot on the stove on medium heat and stir until the sugar is completely melted.You will mix up this ratio of vinegar sugar salt until you make enough to almost cover the cucumbers.
Take an piece of cheese cloth or muslin(I use old T-shirts cut into large squares for spice bags) place a Heaping TBSP of Mc Cormicks Pickling spice in the center of the t-shirt for each mixture of Vinegar sugar that you make up. Use some kitchen string to tie up the spice bag.. Double tie the spice bag.. I also add 1 TBSP of Red Pepper Flakes to the cucumbers..
You will then cook the Cucumbers until they start looking translucent around 40-45 minutes. . When they are translucent they are done.
Use only sterilized jars and heated rings and lids.. (place your clean lids and rings into a pot covered with water and bring to a boil. turn them down and keep them hot until you add them to the tops of the jars.
Laddle Boiling Hot Cucumbers and Liquid into WIDE mouth jars and using a magnet add a lid and then a ring to the jar. I use BBQ Gloves or heat proof gloves for this. When u add the ring to the top of the jar tighten it down really tight.. This is important to seal the lid not he jar. Place the jars out of a draft and cover them with large thick towels or blankets and let them cool down 8-10 hours or over night before you touch them again.
Most recipes call for water bathing pickles but I do not hot water bath my pickles. But if you want to place them into a water bath canner that is up to you. Bring them to a boil totally submerged under the boiling water for 25 minutes with water boiling the entire 25 minutes . Then remove jars to cool. Always cover with thick towels or blankets until they are completely cool. Don’t touch them until they are completely cool.
Able with the date and ingredients and store in a cool dark place under 80 degrees.

This is the exact recipe my momma used. I did it last year and they came out perfect...my momma and I just put the pickling spice directly in the brine, and also added several drops of green food coloring to give them a deep bright green color

I have made these with my mother since I was a little girl. Everyone thinks my pickles are the best they have ever eaten. Mother used to do the 14 day pickles, but these are just as good if not better. Glad you mentioned the crushed red pepper. I love the level of flavor and depth it gives this pickle. They truly are the best pickle in my fridge! Thanks for your advice. It covers everything!

I'm in the process of making this recipe right now. My paternal grandmother used a clean white sock for uses like this so I'm following in her footsteps. Just tie the sock in a knot to hold the spices.

My grandmother use to make "icebox pickles" she made them in 5 gallon buckets. The process took about a week. She would drain the brine and boil it and add it back to the pickles in the bucket with a plate over the pickles ....they we're so good sweet and crisp

Right now we are eating on two year old pickles and they are still great and still crisp.. I do not water bath but use sterilized jars and laddle the pickles into the jars while they are still boiling hot.. I use heat protective gloves.. Also lids and rings are in hot water.. This recipe has been in my family for close to 100 years and we have never water bath canned them.. I put Tomatoes up the same way and have NEVER had an issue.I bring them to a boil use hot sterilized jars, laddle them into the jars add hot lids and rings allow to seal covered with a towel for 8-12 hours. The tomatoes taste allot fresher than water bath canning or pressure cooking them and they last a long time. I am using some now we canned 2 yrs ago.. The tomatoes companies use the same procedure. Sure makes things allot easier. Also pressure canning or water bathing tomatoes makes them all all apart. I even put up my own rotels tomatoes this way.. I just boil the peppers with he tomatoes.. I use no vinegar at all.. I do add 1/2 tsp Sea Salt for pints and 1 tsp for Pints... I know most USDA sites say 12 mths on just about all canned foods but I use my own judgement.... But that is up to the individual.... These are the best pickles you will ever eat to add to potatoes salad, or Chicken Salad.. If you have any questions please feel free to ask..

I was raised on these pickles! My grandma made them every year and I cannot gag down a tunafish sandwich without them. When you make these it seems hard but this is very easy! Hardest thing is to be sure and rinse the pickles very well, I do a few at a time in lots of water. When you share these be prepared, people will make complete idiots of themselves to get more, they never ask for the recipe though! I used cider vinegar this time and the pickes are sharp plus I release the spices and I use a cinnamon stick...be brave! It is so fun to make something that everyone loves to eat.

Thank you for this video. I'm going to use this as my first attempt at pickles. It's pretty dang'd involved but anything worth it is. Excited to add the red pepper but I might just do half lol!! This is the best tutorial I've seen and it makes me think I can do it.

Ii totally agree I wont eat any other pickle but these.. Makes Great Potato salad also.. Try yogurt in your Chkn Salad.. For low cal.. One Tablespoon of mayo.. U cant tell the difference..

Pickles are almost cooked. I have eaten about a fourth of a cup as they are cooking. They are crispy and the taste is great! I followed your recipe exactly except that I added about one cup of chopped onion when I added the cucumber slices to the mix. Thank you so much!

Made these and another sweet pickle recipe that called for alum and I will not make the latter again due to the Alum. Maw-Maw’s are REALLY sweet and very crunchy. It is now the go-to for sweet pickles!!🥒🥒🥒

I am actually watching your video because the recipe instructions on Mrs wages bag leads you to believe that you only boil the vinegar solution and not the cucumbers. It tells you that once you have soaked the cucumbers in the sugar vinegar solution, to drain that solution into another pan and simmer for 35 minutes. I was confused as to what to do with the cucumbers…cook along or go ahead and place into the jars then pour the vinegar over them to can. 🤷🏼‍♀️ Thank you for clarifying. Also, my mother n law used 10 cups of sugar instead of the 8 cups the recipe calls for.❤️🤪

I followed Mrs. Wages instructions and did not include the cucumbers in the vinegar/sugar solution boil and they turned out fine and crispy. It allows you to place more pickles into the jar, and then pour the heated solution in the jar. The video did not include a hot water bath for the jars after they were canned. Everything I have read calls for this to ensure a good seal and to kill all bacteria that may remain. I made 32 quarts and all jars sealed perfectly.

When I make mine I put the suryp ingredients in a pan and heat but do not boil, cover let set at least 3 hours. Then I put the rinsed and soaked and drained cucumbers into the syrup and let rest an hour. Then I heat it to very lightly boil until the chips are translucent. Then they get jarred up to water bath.

So happy to find this video! We always used sweet pickles in our recipes but store bought and now everything has high fructose corn syrup in it. So I'll def be giving this a try ASAP! Could I cube the cucumbers instead of slicing them?

just slice them, and slice them thin because when you cook them you want them to be opaque. I have made these with watermelon rind before and they came out very tough so I chopped them in a food processer to make wonderful relish.

I Iike to stir the pickles and lime solution every hour or so to keep th lime mixed up. it is the calcium in the lime that makes the pickles crisp.

Soaking in the lime water over night or all day is what keeps them crispy. Even 3 years later they will still be crispy..

So, when you added your hot vinegar syrup solution to the cooled cucumbers, you did not let them soak six hours before cooking? I am new at this, and the directions on the package say that once you cover them with the hot vinegar solution, you let them soak for six hours. I like your way better.

you must use the pickling lime powder, nothing else. Also be sure to rinse rinse rinse after they soak in it over night. This lime does not add flavor, it adds texture so the pickles are crispy.

I don't pickle tomatoes.. I just peel them bring them to a boil have my lids hot fill jars and seal them down.. I do add 1/4 tsp salt to pints and 1./2 tsp quarts. I also place them on a thick towel and cover them over night. I also invert the jar the first hour then flip them over.. I have never PC tomatoes or even water bathed them and they last for years.. Taste a fresh as the day u put them in the jar..

I know about not using an aluminum pot for when you are lime soaking the pickles . My question is can they be cooked in an aluminum pot during the cooking process . how many lbs do you figure per qt jar . I'm from eastern North Carolina and these pickles are a staple there . My mother made them every year but she used that tedious 8 day process . I made some very similar to what you did here back about 5 years ago and they turned out great . No they can't be cooked in Alluminum either...It can react and make them turn dark.. These are great and I can't eat potatoe salad or Chicken salad with out them... Thanks

I do not water bath them.. As long as you add the lids hot and the hot pickles they will seal fine..

I don't water bath these pickles. Because the pickles are cooked and added to the jars hot and the lids are also hot. I have never had any of these pickles not stay sealed or become un eatable. I have made 25 quarts this year already...

Sorry but I have never seen a cucumber that is yellow on the inside.. You might want to take it back.. Two cucumbers probably would only make 1 jar or less of pickles

I soak my cucumbers in pickling salt with ice & keep them in the fridge for at least 4 hours...the longer you keep them in the fridge, the crisper they will be....NOTE: DON'T KEEP THEM IN THE FRIDGE OVER 10 HOURS...
