Your property is very beautiful - I see your are enjoying your bountiful harvest! I really envy you for that! I have a tiny back yard which is mostly gravel so I try container planting - some things turn out better than others. Love your vids. Keep going!!!
My dad is a czech originally and I grew up with huge Crocs, two of them ,one had sauerkraut in it and the other had pickles, we put dill and grape leaves, it's a different tastes it's an acquired taste but I sure do miss that homemade sauerkraut homemade pickles mom and dad made he smoked sausage and we would get the sharp cheddar cheese from the market and have crackers pickles, cheese and smoked sausage you couldn't beat eating it while you watched Ed Sullivan or Red Skelton .❤ .love your videos from South Texas

I've never had to because they get eaten LOL but yes, you water bath them. Take the spice bag out, pack the pickles in jars, reboil the syrup and pour over to 1/2" of top. Process for 10 minutes.
I use whatever pickling spice I have on hand. Nothing special. And not specifically for sweet pickles. We don't have the brand, Mrs. Wages, here, but a quick look on the internet and it looks like it would work well. :)
Without a cold cellar, your best bet is probably your refrigerator. They need to be kept cold or they will go bad. If you are using a crock to pickle them and it is too big for your fridge, after you've added the sugar and it is mixed well, you could transfer them (still covered with the pickling brine) to smaller, lighter containers that will fit in your fridge.
