In Today’s video, I will show you how I can Fajita Vegetables (Peppers & Onions) for shelf-stable storage. These are also great in soups, quesadillas, casseroles, and stir-fry.
I am using the times given by the National Center for Home Food Preservation, and University of Georgia So Easy to Preserve book.
I am not telling anyone that this is the way it should be done. I am only sharing with you how I do it in my kitchen. I have done my research and I am comfortable with doing it this way. I strongly encourage you to do the research and do what works for you. The National Center for Home Food Preservation is a great resource, as well as the Ball website. I have left a link below. There are also several groups on Facebook and lots of videos on RU-vid to help you get started and find information.

Are you kidding? YOU are an excellent teacher, thank you so much!!! Can't tell you how many fluff vids are out there. Some of em leave out important info, they go on and on about politics and other stuff...was so frustrated, just wanted a simple explanation. Watching you can has taken all the "fear" of canning away. I enjoy every video even if some of the items are not things I would like. I have been so encouraged by how easy/simple you make things that I'm canning every chance I get. I work over the road and even got an electric canner so I can can in the evenings after I stop. This is an extremely useful video! I've been looking for a way to store peppers and onions, other than freezing or dehydrating. I've done both. I like the ease of "pop" the lid, lol!!

Thank you for uploading a video on mixing your own vegetable combinations. I bought 5 books on canning and have basically duplicates of complex recipes and plain single vegetable instructions - nothing about combining vegetables that I would find useful together. No sections reference canning onion. I have pages on salsas and pickling, but as someone with a dangerous allergy to vinegar, that is out. I am really grateful to see that as long as you adhere to the longest relevant time to the vegetable used, that you can can certain combinations. I would have loved a more simple canning book, some of the recipes use around 15 ingredients, yet tell you not to alter proportions etc. There is very little on using and working with pure ingredients out there. Thank you! I believe that simple is best. I try to can my ingredients the way I would use them. I can onions alone, peppers and onions, and celery for stand-alone ingredients. some things you wouldn't combine based on the time you have to can them... only because a 20 minute ingredient in a 40 minute combination will turn to mush. I have always said my kitchen my rules, and let common sense prevail. I am glad you enjoyed the video.

Just found this in a search for canning peppers & onions. It's such a simple, easy, and basic recipe, just what I was looking for! I also like and appreciate your warning about the temperature change/thermal shock. A cold bottomed jar into hot water, that's something I've seen people do wrong so many times. Thank you!

Welcome aboard! If you are new to canning, then I definitely suggest that you research before taking advice from others, including me. I don't post recipes that I have not tried and tested myself, but I know that some do.... If I am trying a recipe that is not one of my standards, I can a small batch and test a jar every month for 6 months, then do a video when I re-can it for storage. I always have a link to the alphabet agencies that have "tested and US government approved" time tables and recipes. I am part of an international group of canners, and not every country has the alphabet agencies to tell them what is not safe. Since I use some of their methods, and some of my family history methods, I am considered a rebel canner. All that said, welcome, and I hope you enjoy the videos!!!

At least you are honest about being a rebel canner! I think everyone probably is a rebel canner to some degree, especially if there is a canning history. Our grandmothers tested recipes before USDA came on the scene. LOL I am a researcher by trade so I never rely on RU-vid videos where some RU-vidrs are sponsored by canning and lid companies. I always research things out for myself. Thanks for sharing your wonderful content

Never thought to do this and I wanted to limit use of freezer since you never now when freezer can go out or power. Lost 2 freezers of food before during hurricanes.

I agree that for most things there is not a need to pre-cook. For a lot of things, it is more habit and what I have always done - like these - I did not HAVE to blanch them, I could have raw-packed them and they would have been the same. I do like to pre-cook a few things, like sausage patties (so they don't stick together) and if I am making something with ground beef that has flavors (taco filling, sloppy joes, etc)

Fantastic tutorial! I'm surprised no seasoning went into these jars, but I suppose that makes for a more versatile product. Do you keep the fajita meat plain as well, and just add to the skillet on fajita night?

Paper towels aren't always a good option for wiping lids some of them are very linty. I like using a flour sack towels.

It is typically NOT RECOMMENDED because there has not been testing done, or there is a density issue and they will not get heated properly all the way through. I have not canned in quarts, as it is just me, and I usually can in pints and half pints.

just commenting to learn from my mistake, its not recommended to pressure can mushrooms in quarts. I did quart size, mushroom, peppers and onions because i have a big family, and had to reprocess into pints.

I have used quarts for marinated mushrooms once or twice (to my downfall, I couldn't eat them all before I felt they should be tossed), but those are pickled, and there is a difference with pickling because of the acidity of the vinegar.

@@FyreflyesFollies don’t let food loss keep you from buying mushrooms.... dehydrate what you don’t use! I love doing that, and you’ll always have a handful to toss into whatever recipe you’re making :)

I brought them up to a boil for about 2 minutes to blanch them, then filled the jars while they were still hot.

I bought mine at WalMart a couple of years ago. It is the Presto Aluminum 23-Quart Pressure Canner and Cooker. You can also find them at Ace Hardware and several places online.

About two months ago I ordered my 23qt presto through Walmart. It was $100. And free shipping. My local Walmart has a few 16qt in stock for $75. I have used mine almost non-stop. (My canner is just like the one in the video.)

reduce your blanch time. I did a bath that turned out fine, and a batch the same day that were mushy. I have no idea why, since they were done back to back from the same vegetables and the same processing times.

I hope you'll see my question even though it's been a little over a year since you've made this video. If you're 10 minute steam time has passed and the little button still hasn't quite popped up, would you go ahead and put the weights on or would you wait until the button pops up? You time the steady stream of steam for 10 minutes...the button some times takes awhile to come up as canner builds pressure. Be sure you check canner every time to be sure it's in good order. Hope that helps. I'm rewatching the video to make sure I'm gonna be ok, lol!

wait the 10 minutes, then put your weight on. The button is a safety lock to keep you from opening the canner while it is still under pressure. Once you put your weight on, the button will pop up within a minute or two.

What is the shelf life on these ?

Till the seal fails? I have opened canned goods that are 3-4 years old and they have been fine. I have also had seals fail after 6 months and been forced to toss out things that should have lasted longer.

yes!! you can do just onions. I have a video on doing carmelized onions, but I do raw onions at the same times.

I would definitely NOT say that!! I am a "rebel canner" so I believe that just because something is or is not RECOMMENDED does not mean it is wrong or not good. Use your own judgement. It is your kitchen and your food. If you have any doubts, use your best senses when you open it - does it look right? Does it smell right? Does it taste right? I wouldn't toss it just because of jar size. I rarely can anything in quarts (juice, milk, and spaghetti sauce is about it) because I am a single person household and more than a pint is probably going to be wasted before it is used. My granny canned her peppers and onions in quarts, but she was feeding a big family.
