Ingredients:
•2 sticks unsalted butter,
softened
•1 ¼ cups sugar
•1 orange
•2 ¼ cups all purpose flour
•1 ½ tsp baking powder

½ tsp baking soda
•2 eggs
•1 cup ricotta cheese
•½ tsp salt

½ tsp vanilla extract

½ cup chopped pistachios
•2 cup mini chocolate
chips
Directions:
•Zest an orange (for instructions, see How to Make a Key Lime Pie) and set the zest aside.
•Using a stand mixer with the paddle attachment, mix on high the softened unsalted butter, sugar and orange zest for about 3 minutes, or until light and fluffy.
•In a separate container, mix together by hand the all purpose flour, baking powder and baking soda and set aside.
•Once the butter/sugar/zest mixture is light and fluffy, add the eggs, ricotta cheese, salt and vanilla and mix on medium until everything is combined.
•Add the flour/baking powder/baking soda mixture and mix on low.
•While the mixer is still running, add the pistachios and 1 cup of mini chocolate chips.
•Move the cookie dough to a bowl and refrigerate for at least an hour, but no more than 12 hours.
•Preheat an oven to 350 degrees.
•Line cookie sheets with parchment paper.
•Scoop about two tablespoons of cookie dough on to a parchment lined cookie sheet.
•Repeat step 10, keeping scoops of dough at least 2 inches apart, until all of the dough is used.
•Bake in a 350 degree oven for 12 minutes.
•Once out of the oven, let the cookies cool for about 5 minutes before moving them to a cookie rack.
•Let the cookies cool on cookie racks for at least an hour.
•Once the cookies are cool, melt a cup of mini chocolate chips in the microwave.
•Place the racks of baked cookies in or over the parchment lined cookie sheets and pipe or drizzle the melted chocolate over the cookies.
•Refrigerate for 10 minutes or allow chocolate to set at room temperature.
