Finding a great cannoli out isn’t the easiest thing to do, and making them at home can be a tricky, and messy experience. And by “can be,” I mean, “will be.” However, thanks to our old friend the tuile cookie, this much simpler, way less messy “cheater” version produces something very close. Unless you’re from Southern Italy. In which case this isn’t close at all (hence the name).

Chef John, this recipe looks absolutely *AMAZING*!! Can't wait to try it, for my BF's & my birthdays, which are coming up, on Jan. 31st (his), and Feb. 1st (mine). :) I actually have some Ricotta & cream cheese in the fridge, AND some leftover pistachio nuts!! And, NO CANNOLI ROLLERS, sooo - this aluminum foil hack is a PERFECT IDEA!!! TYSM!! Just so happen to be watching this video, in 2021, one day before the one yr. anniversary, of its posting!! Actually, I'm Sicilian and I'm not mad about this. Why? Because in Sciacca they invented a version of similar kind of cannoli called, instead, OVA MURINA. They are crepes made with a batter that has almond flour included. Also, they are not filled with ricotta cheese, but with a kind of pastry cream that has no eggs. Why this change? Because during summer there was no ricotta available, so they preferred to use just the milk. To make ricotta you need a lot of whey, which comes from making cheeses. So yeah, these could be a derivation of such cannoli called: OVA MURINA from Sciacca.

I am Sicilian and have taken 4 decades to perfect my family’s recipe. I received the highest praise possible. My grandfather has never said that anyone’s anything could ever beat his older sister’s cooking or baking. I had him try it at Christmas a few years ago. He took a bite and what he said silenced 40 of our relatives by this one statement, “My god they’re better than Giusepina’s!” My response is best said like this, “😧😧😧!” This is my greatest accomplishment ever! He passed away 1-2 years after this, and is something I never expected to hear, but is my biggest point of pride.

I'm Italian, have grown up eating cannoli, and I think this recipe is fantastic! I love it that Chef John uses fresh citrus zest instead of candied zest. And I also like the idea of a lighter, crispier shell. Sometimes you can teach an old dog new tricks!

Fair warning: Italians and New Yorkers avert your eyes... For me the traditional cannoli shells are waaay too hard. And yes, I have eaten them from the best Italian bakery which everyone raves about the cannoli. This is just a personal preference ... so THIS looks perfect ! @@MarySanchez-qk3hp If by healthier you mean you've saved a few calories on the shell but kept the incredibly fatty insides as is, then yes it is healthier. I'm not saying it as a critique for the recipe, I just don't think those things are meant to be healthy

A little vanilla and/or almond extract with the citrus zest sends me into orbit. Thanks, Chef John, for a brilliant retake on a classic. I'd prefer this thin, crisp, not-fried cookie shell. My mouth is watering, and the anticipation of mouth feel is exquisite. I learned to make fabulous cannoli from a "Brutsay" (family on both sides from Abruzzi) friend, descended from great cooks and bakers, but my preference is to taste traditional and then use any appealing method/ingredients that up the experience. I've collected many simple and delightful ideas from your always enjoyable videos. You're certainly a good friend to many good enthusiasts like myself.

Draining is definitely a good idea. The legit bakeries here in New York use ricotta impastata which makes them have that uniquely grainy delicious consistency. I know some also use cinnamon oil and vanilla extract in the filling.

Honestly I think my old lady will like this recipe, she's reached the cheats stage of buying the damn tubes, although we use a lemon custard instead of the cream cheese, probably a regional thing.

GEOM: suggest to her that she use ice cream cones instead. Cheaper, not as brutal on teeth. The only good,ones I've ever found are Trader Joe's, they actually taste like real food.

Oh man, Chef John...salivation has ensued! I LOVE cannoli...reminds me of when I was a kid in SF and my parents sent me to the Stella D'oro bakery with a nickel, to get ONE cannoli (yeah, I'm that old). Of course, I also had to stop off at Sts. Peter and Paul's church to light a candle and give thanks.

Use the cardboard dowel from a roll of paper towels for shaping the cookies. Cover it with baking paper or packing tape for a smooth surface. They can be reused for a long time. No need to waste foil like that.

Another bright idea. What about a broom handle. Or get a wooden dowel from Lowe's, Walmart or Michael's and wrap in parchment, in case food shouldn't touch it.

Sounds like some of you are on your way to a Mexican version. Same dairy, but grated traditional Mexican chocolate that has cinnamon and piloncillo in it... chile powder or cayenne would not be a travesty! You could add toasted almonds, whatever the nuns traditionally used down there. Looks like Chef has opened up Pandora's box again.

I care. Italian food is a major tradition, still evolving. They still shop for fresh ingredients in markets, even the young adults, and cook their own food evenings. They eat leisurely and enjoy each others' company. Their respect food more than Americans. They cook wonderful things in tiny kitchens, while many Americans eat junk food in their cars on the freeway. And although I violate their rules, there's good reason why certain pastas are meant for certain dishes. I taught ESL to a young Italian woman, and to thank me, she and her cousin invited me over and cooked for me. They stood at the stove, brows furrowed, seriously debating about when to add more of each ingredient, and didn't understand why I couldn't stop grinning. They respected the food, and oh boy was it delicious! I don't know anyone where I am, who loves to cook and bake. But Italians were also seafarers and merchants who spread their recipes and new vegetables, fruits, spices, etc. from port to port, and even then recipes were modified by different towns. So they did it, too. Don't forget, they didn't originally have noodles or rice, tomayors, corn or peppers. They were flexible about adopting new tastes. Why can't we?

This filling looks much better than my step mom's version. She is a Sicilian, she makes hers with just ricotta, chocolate chips, and powdered sugar and a little vanilla extract. I would rather eat yours then have to pretend like I like hers.

What we used to do was make pizzelles and roll them. Right off the press, they’re perfect for rolling and the anise flavor makes a superior tasting shell, in my opinion, without that oily taste from frying. I think it is a lot easier than this and it’ll be much faster.

Just made this 2 days ago. SOOOOO delicious. I woke up craving the leftovers. Legit made a small pot of spaghetti and ate this for breakfast the next day. The only thing I want to warn people about is, there is A LOT of chili powder in this. It was way too hot for my kids and wife. That just meant all the leftovers were for me. I just made a side of pasta sauce for the kids to eat their spaghetti, and I got this treasure. Thanks for another GREAT recipe, Chef John!

Maybe invest in an air fryer if you want fried foods but are afraid 😊 I recommend a ninja foodie, they have different ones with different features and it's worth it if you really love cooking! 😀

It's just another fad appliance with limited range. The best ones are expensive. America's Test Kitchen reviewed them. Unless your kitchen is huge and you have lots of storage, I've seen mixed reviews. Chef's way is more reliable and you already have an oven.

I am absolutely going to make this because I have fond memories of delicious cannolis from our local Italian bakery. And yes, they add pistachios. Yummy! By the way, I just subscribed to your channel.

Grew up eating authentic cannoli's in Chicago. My dad was from Sicily, but my mom who wasn't Italian learned how to make all things Italian when they got married so my brother & I got to eat some really great food. These look pretty darn tasty so no swearing from me!

My Norwegian Grandmother made these cookie tubes every christmas. Krumkaka I believe it was called. The filling looks good.

Putting the ricotta in a food processor until smooth works great. You must drain the ricotta overnight. Galbani full fat is thick, smooth, and has less whey. Then add powdered sugar and vanilla and blend. Then fold in semi-sweet mini chocolate chips.

I'm southern Italian by ancestry and this is brilliant. I had the worse experience of my life trying to make cannoli for my husband. The cheese, though I drained it for 2 days never seemed to dry enough. It was runny. I wept. I never thought of extra cheese.
