6 large carrots (grated)
1/2 cup raisins (optional)
1 cup chopped walnuts (optional)
Frosting
2 8 oz tubs vegan cream cheese
1 can coconut milk (chilled over night)
1 cup powdered sugar
1-2 Tbsp lemon juice (optional)
