Any insight into how you solve the issue of IT asset management with CASB? For example: you discover a new SaaS application being used on your network, now you need to assign ownership for said application.

Not exactly sure how to respond. You'd onboard the SaaS app consistent with your established on-boarding practices. If you have a CASB, you can assign the owner/users in the CASB and they will have their privileges assigned.
