Join Morag Gamble (moraggamble.com / permacultureed...) in her permaculture garden for another live at 5 clip - this time about Cassava (Manihot esculenta), an incredibly easy perennial green to grow. Cassava is a super hardy and low maintenance plant. Actually Cassava is mostly grown for its starchy root (also made into Tapioca flour). Cassava root feeds around 1/10 of the world population with their main source of carbohydrates. This is good filling food, however the leaves is where you find the most of the plant's protein and vitamins. Listen in for ideas about how to prepare and eat cassava. Do you cook it?
