Hello again, I’m visiting Seaton Beach this week where we’re cooking Kung Pao Dogfish on the pebbles at 3am 😂. The fishing was pretty dire with an invasion of bait robbing spider crabs taking over proceedings. It was a bitterly cold night for the time of year, but managed to get a few mackerel at first light before heading home. The ingredients list below is what I used, no need to measure out, just use the force…watch the vid for the method!!
1 x dogfish, fillet, skin & dice
1 x egg white
2 x tbsp cornflour
2 x tbs olive oil
4 x spring onions
1 x small leek sliced
1 x tbsp finely diced fresh ginger
1 x red chilli sliced
3 x garlic cloves sliced
1 x tsp szechuan peppercorns crushed
2 x tbsp cashews or peanuts
1 x tbsp shaoxing wine
1 x tbsp oyster sauce
1 x tbsp soy sauce
1 x tbsp hoi sin sauce
1/2 bunch British asparagus
Spring onions & coriander to finish
Serve with steamed rice 💪🏻👨🍳👍
