Cauliflower curry is a quick & simple recipe for vegetarians with coconut milk. This recipe uses seasoned and perfect roasted cauliflower.

Ingredients:
To roast cauliflower:
Cualiflower
1/4 tsp Salt
1/4 tsp Pepper
1 tsp Oil
Masala powder:
1 Tbsp Fennel seeds
1 Tbsp Coriander seeds
1 Tbsp Cumin seeds
For curry:
1 Chopped onion
4 Chopped green chillies
2 Tbsp Ginger Garlic paste
1 Tsp curry powder
1 Tsp Amchur powder
2 Tsp chilli powder
1 Tsp Salt
1/2 Tsp turmeric
1 can coconut milk
Steps:
1. Roast cauliflower in oven 350c for 20 minutes
2. Dry roast masala powder ingredients for 5 mins on a low flame and grind into a smooth powder
3. Heat oil in kadai, add onion, green chillies, ginger garlic paste
4. Add curry powder, ground masala powder, amchur powder, chilli powder, salt and turmeric powder
5. Add coconut milk
6. Simmer the curry for 5 to 10 minutes. Serve hot with Naan bread.
