Celiac Disease: Symptoms, Pathophysiology, Diet Nursing NCLEX Lecture

Celiac disease nursing NCLEX lecture on the symptoms, pathophysiology, nursing interventions, and diet (gluten-free) foods. Celiac disease is an autoimmune GI disorder where when gluten is ingested (which is found in wheat barley, grains, and rye products) it causes damage to the small intestine, specifically the intestinal villi.
There are several proteins in wheat and the main protein that causes problems in Celiac Disease is called GLUTEN. Gluten itself is constructed of a group of proteins called gliadin and glutenin. Gliadin is the problem with Celiac Disease which causes an immune response. The amino acids which make up Gliadin can not be broken down into single amino acids but stay as peptides. This causes an immune response.
Celiac Disease tends to be genetic and can occur in both children and adults. Celiac Disease is different from a wheat allergy or gluten sensitivity in that it causes similar signs and symptoms, but there isn’t the same extensive damage to the small intestine as in Celiac Disease. There is no cure for Celiac Disease except following a gluten-free diet.
Signs and symptoms of Celiac Disease include: Mouth ulcers, Anemia, Lactose intolerance (can't break down lactose), Nausea/vomiting, Osteo (bone) changes (thinning, fractures), Unexplained slow growth, delay puberty (children) and weight loss, Rashes (very itchy rash called dermatitis herpetiformis on the elbows, backside, hairline, and knees), Irregular periods, irritable (depression) (loss of nutrients), Stools: greasy and odorous, Hair loss, Enamel changes to the teeth (yellow or brown spot and deformity), Diarrhea
It is important the patient avoids food with gluten. Some foods that contain gluten are: Wheat, Barley, Malt, Beer, Pasta Noodles, Rye, Seasonings, soups, Anything with breading that doesn’t say gluten free,, Anything that looks like bread: croutons, crackers, breads, dough, cookies, most cereals, oats unless they say Gluten-free

@Ron G,Day Ron i have had half my Bowel taken out when i was 21 then Illium three foot of gang green intesting 3 lots of Adhesions i have trouble absorbing medications i have to take Questran Lite i must have B12 Inj once a month lots of blockages of my gut but no Dr has put a name to my trouble do i have Celiac Disease ? im 68 now been on Questran Lite for 30 years cheers very interesting keep up your Great work cheers .

Thank you so much. I love your videos!! I just wanted to add that gluten is found in health and beauty products, crayons and glue. I’m sure there’s lots of other non food items that contain gluten as well. Also for people to be aware of cross contamination when purchasing food from deli counters and such:)

Thank you - where can we find a Nurse like you these days in the UK?! I have shared this in a hope it will help my recently diagnosed Dad with his Celiacs, as I just don't feel he is anywhere near the right track or that he is getting the professional support he needs. He hasn't the strength to dress himself & showering is a trauma - I'm on the other side of the world so all I can do is find helpful videos like this which may help my Mum look after him - but how do you combat STUBBORN? I just hope this video sinks in... I did learn something new, that lactose intolerance is possible, I didn't know this & they have been stuffing him with dairy as that is high calorie & he is awfully MALNOURISHED. Thank you.

Celiac is not diagnosed when i tested from laboratory. But i can not drink and eat properly. There is lot of stomach pain and pain is relieved when i eat something, then motion start. The pain is worse between meals and night. When i eat rice i feel relaxed but lot of rice leads to asthma at night.

Will reactions be a few days after consumption? I was eating gluten for a few days and felt fine, then the next morning I drank a McDonald’s coffee with creamer and as soon as I did that, my stomach started acting weird. That night led to me puking for a few hours until I passed out. Puking up everything I ate. Then next morning I could hold food down, but felt like crap, stomach pains, fatigue. It was like this for 4-5 days. Now I’m typing this thinking I’m recovering. Stomach still does not feel 100% but I’m a painter in the sun working all day, so I’m sure that’s not real good for it. Anyway, I’m hoping It’s just this gluten problem. Mom thinks it could be an ulcer, but this same thing happened before, but it was after I drank two beers and ate a brat with a bun. Puking, etc, etc. hoping it’s just a gluten thing!!!!!! Stool looks totally fine throughout the process. Was constapated for a a few days and wasn’t really eating much (banana a day type stuff) then slowly when back to normal stool process

Celiac. For me only few years ago I heard about it. I have no sickness of it but at my age 67 a started eating almost gluten free and drinking almond milk no white rice flour pasta no sugar no salt. The truth I feel 40 years old not 67. Thank you
