Ingredients :
Water dough (水油皮):
180g plain flour (普通面粉/中筋面粉)
2 tbsp custard powder (蛋黄粉/吉士粉)粉
2 tbsp caster sugar (细砂糖)
40g lard or shortening (猪油或白油)
100ml water(水)
Divide Into 8 portions , 45g each

160g plain flour(普通面粉/中筋面粉)
80g lard or shortening (猪油或白油)
Divide Into 8 portions , 30g each
分成8等份,每份30克
400g lotus seed paste (莲蓉)
20g toasted melon seeds(烘香瓜子仁)
4 century eggs (皮蛋)
Some prickled ginger (腌姜片) • Pickled Ginger 醃泡酸姜
1 egg yolk (蛋黄)
1 tbsp egg white (蛋白)
1/8 tsp salt (盐)
Some black and white sesame seeds (少许黑、白芝麻)
