Ingredients:
Oil/Ghee ¼ Cup
Pyaz (Onion) sliced 1 medium
Tamatar (Tomato) sliced 1 large
Adrak lehsan paste (Ginger garlic paste) 1 tbs
Zeera (Cumin seeds) 1 tsp
Sabut kali mirch (Black peppercorns) 1 tsp
Darchini (Cinnamon sticks) 2
Laung (Cloves) 4-5
Hari elaichi (Green cardamom) 2
Badi elaichi (Black cardamom) 2-3
Tez paat (Bay leaf) 1
Badiyan ka phool (Star anise) 1
Javitri (Mace) ¼ part
Safeed chanay (White chickpeas) 2 Cups (Boiled with salt)
Kuti hui Lal mirch (Crushed red Chili) 1 tsp
Namak (Salt) 1 tsp or to taste
Chinese Salt 1 tsp
Imli (Tamarind) 1 tbsp.
Aloo Bukhara (Dried Plum) 3-4
Dahi (Yogurt) 2-3 tbsp.
Pani (Water) 3 cups
Hari mirch (Green chilli) 2-3
Chawal (Rice) basmati 1 &1/2 (soaked for 1 hours)
Directions:
In pot, add oil and heat well.
Add onion and fry until light brown.
Add chopped tomatoes and mix well.
Add ginger garlic paste and mix well.
Add Cumin seeds, Black peppercorns, Cinnamon sticks, Cloves, Green cardamom, Black cardamom, Bay leaf, Star anise, Nutmeg, Mace.
Add Crushed red Chili, Chinese Salt, salt.
Add White chickpeas mix well.
Add yogurt and fry until oil separates approx.… 4-5 minutes.
Add water, whole green chilies and bring it to boil.
Add rice, mix well and cook on high flame until water is reduced then cover and steam cook on low flame for 10-15 minutes.
Serve pulao with Salad and raita.
