Char Kway Teow Recipe | Penang Char Kway Teow | Stir-fried Rice Noodles| 炒粿條
Who doesn’t like a good and super tasty Char Kway Teow with a smooth smoky (Wok Hei) noodles, with lots of prawns, Chinese sausages, fish cake, bean sprouts, and chives?
Everyone know, Penang served one of the best Char Kway Teow in Malaysia. And every time, I have a chance to go Penang, Char Kway Teow is my favorite to grab other than Assam Laksa.
So, I guess I can’t go to Penang every time I have this craving.
Lucky me, I have a good recipe of Char Kway Teow here.

By far the best CKT tutorial i have seen and makes sense. Also i like the dry version like this. It’s a crime for a CKT noodles to be wet and soggy and doesnt have all the ingredients sticking to the noodles.

Hi there..i did tried ur recipe and it turn out very gd. Thanks for your sharing. Since i'm a muslim, i did removed all the non halal ingredients, still i can enjoy a delicious char kuew teow! 👍

I spent several months in Penang over many trips. I enjoyed every meal I had at the hawker centres. Fantastic food! Char Kway Teow is definitely one of my favorites.

Great Recipe! Made this for the first time and it tastes really good. As some have commented, I did not add salt to the sauce.

If yoy want crunchy bean sprouts you should add it in after throwing in the cockles at the end.

Hi, I just tried this recipes without the clams, fish cakes, prawns, (replaced with sliced lobster cakes), add sliced baby corns and carrots as well as fried tofu pok as topings, i must say the seasoning is so spot on...its super delicious 😍 especially with the dry shrimps belacan n sambal paste. (By the way i replace Sugar with Honey, n the thick sweet soy sauce i mixed half with the salty one and the taste of penang char kueh tiaw is still there, just less sweet which is exactly perfect for me) This will be go to recipes for noodles from now on. Thanks Chef Lu!!!

I tried this recipe. It's good. Tastes like the Real Deal. The Key is spreading out the noodles onto the wok for it char nicely after adding the sauce.

Well, I did see some street vendor putting bean sprouts in the early stage but I do prefer to put it in a bit later on. I prefer my bean sprouts and chives not too mushy. You know this is just a personal style, you can put it earlier or later, depending on whether how you want the beansprouts and chives to be cooked.

For this recipe, I guess it's doesn't matter. I think depend on your preferences. I don't use both soy sauce.

i prefer the cockles raw, added last minute. if they are really fresh, you can get the taste of sea. it seemed a bit too dry, if you can add a bit of chicken stock with sesame oil, oyster sauce, and soy sauce, add into the frying wok after the coloring of the black soy sauce and cover the wok completely, let the gravy "enter" into the noodles, it will be even tastier and flavorful. oh and dont forget lard. that's the ultimate char kuay teow

I do not think that the brand of the soy sauce will make a huge different. But, anyway I will let you know my brand of soy sauce as follows. 1.abc sweet sauce 2.lee kum kee soy sauce 3.lee kum kee dark soy sauce

Hey, I live in Canada and was wondering how you made the sambal or do you have a rough idea of where I can get it? We have similar brands when it comes to Asian sauces, as I can easily get them from an Asian supermarket.

Hey Bobby, don't worry about the sambal too much. It gives a hint of spiciness in the char kway teow only. If you can't find sambal in Canada, you can take 3-4 pieces of dried chilies and blend it with a little water. Or you can omit it.

The solid chunks were fried pork lard pieces. If you get a fatty piece of pork belly, you can cut out the fat into pieces, and fry them to get pork lard crisps. Similarly, if you render the pork belly fat, you will be able to get lots of pork lard.

I'm sorry, I don't have the recipe on my channel. But, if you don't have the sambal, you can put chili paste too or dilute 1 tsp chili powder with 1 tsp water, that will do the trick. or you can just omit it.

Is the dark soy sauce the thick or thin type? I think the Lee Kum Kee one is on the saltier side and is thinner. The dark soy sauce is not caramel dark soy sauce right?

Dark soy sauce is thicker, and it tastes less. People use it for the dark color. Light soy sauce tastes salty, and it’s thin, light reddish brown in color and opaque.

I bought ready made sambal sometimes. Or alternatively i will use a chilli paste, just to gv some spiciness to the dish. U can buy dried chillies, soak it with hot water until soften and blend it until smooth.

I ever eat the JB Chinese Char kway Teow with cockles and always tabao for my wife..I ask for extra kway teow from that Chinese Uncle..Twice a week i will patronage his stall opp Sungei Seget there👍🏻👍🏻👍🏻Two packets for RM8 worth it...I always give RM10 and ask him to keep the change..Quite a number of Malays also patron there..

If you live in Southeast Asia, it should be easy access to get it. But, if you don't then it's going to be tough unless you google how to make the kway teow from scratch. It's going to add more steps to it.

You can buy sambal from the asian grocery store. But, if you can't find. Just buy chili paste or blend until smooth 3-5 dried chilies ( depending on how spicy you can take). You'll get chili paste. That's good enough to replace the chili or spiciness in the Char Kway Teow. Thanks.

You can change pork lard to shallot oil ( minyak bwg merah) or minyak biasa jelah. Tak semestinya kena pork lard. 😉

yes, it is. It's really delicious. I just make it again two days ago. You can make it halal version by cutting out the pork lard and chinese sausages. Believe me it's still going to be delicious!

I want to make this so bad but I don't have majority of the ingredient. I'll most likely just toss in whatever vegetables I have and hope for the best.

Just do it, don't let the ingredients stop you. The most important is the sauce, noodles, any vegetable and meat. It may not taste like Penang Char Kway Teow but at least it tastes good. Just have fun 😁

I make my own pork lard from scratch by using pork fat. But, if you don't have it or can't find it, is okay. You can use shallot oil or regular oil to make it.

Good tutorial but when I made it , it was way too salty ! Just a warning cut down on the salt In the sauce

Hi Ben, if it's too salty for you, you can reduce the mixing sauce from 2.50 tbsp to 1.50 tbsp or up to your liking.
