You have the same Performer that I have. That drop down shelf is the big reason I got it. Great video for the beginner. Unfortunately I have a bad habit. Modifications or additions. The Weber kettle has a lot of neat stuff you can get. On mine I switched out the flip up grill grate for a cast iron one with the center circle so I can insert the griddle plate. I replaced the charcoal grate with a cast iron grate that has holes in it.. Sure saves on Charcoal. I also have some simple things like the charcoal baskets, I use them for indirect, Grill Grates, a Vortex for when I do wings and thighs, the Slow and Sear, I'm not really sold on that though, and of course the Weber good cover to protect my investment. Then there is the two biggies. 1. The Only Fire rotisserie attachment. I've done chicken, turkey, boneless ham and a beef roast. If you haven't done a rotisserie chicken you haven't done chicken. I also added the Only Fire electric kabob rotisserie kit. Personally I don't recommend it. Great for meat kabobs but bad for trying to put veggies on the skewers. They are too thick and the points are rounded and not sharp. The veggies kept breaking apart and wouldn't stay in the skewers. I have a Pit Boss series 3 Copperhead cabinet set up for jerky, a 14.5" WSM, somewhat modified, an 18.5 " WSM, highly modified, a Camp Chef deluxe 24 pellet grill, with a ton of add ons, the only thing I use is the gas sear box. I consider their Side Kick a gimmick. There isn't enough room to make a decent sized breakfast on it. I got my first Weber Kettle maybe 49-50 years ago. I got my Performer last year. I'm 80 years old, pushing 81, I use that grill every week. Without fail. Tomorrow is a chuck roast. Two charcoal baskets with B&B briquettes, one on each side, Montreal Steak seasoning with a drip pan in the middle. I really like your videos. Great cooks, great advice. I'll never be the Pit Master that you are but, I do like learning and experimenting.👍

The you have the same only fire rotisserie that I have. Take a look at my Sirloin Teriyaki Kabob video I did 5 or 6 months ago. I like it. Yeah, It looks like you and I like to do mods on the kettle for sure. Take care John.

@@Viewtoagrill As the Norskies in northern Minnesota would say "You betcha". So easy to mod it. I've got more money in mods on my 18.5" WSM than I paid for it 20+ years ago. And you know what else? I haven't regretted one single dime of it. Keep up the good work young man.

Great video, very helpful. I really appreciated your cleaning technique, as this is something that I have neglected for a long time. One question about your example of the Tray Grid combo... you show a great way to cook burgers, but when you flip them, do you take the grid off the grill and flip individually off the grill and then put back on to finish the cook? Or do you flip each burger while everything is still on the grill?

I use to use a charcoal grill on my wooden deck. If charcoal drops it just smolders until I would spray it with my water hose. You have to make that judgment call for yourself though.

yes, the cleaner is safe, the scrub brush gets warn but I have never seen any of it on the food. I take that xtra step and wipe the grates off with the towel.
