Their apparent tech level is sort of late medieval/renaissance type with few exceptions. The maneuver gear is of course unrealistic, but it uses compressed gas as a method to store energy, which is fairly plausible. The 3rd season may explain a bit more.

When I was initially watching this episode, Bertholts "YOU SPAWN OF THE DEVIL" towards Armin seemed a little odd, but I just assumed he was angry and saying the first thing the came to mind. Now knowing his origins, it's a lot more meaningful. As he if he reconciled his doubt immediately but jumping back to them being demons of Paradis.
