Chargrilled Oysters on Big Green Egg Recipe

Chargrilled Oysters - If you’re a fan of Oysters, this Chargrilled Oysters recipe is for you. Fresh oysters are one of my favorite treats when I go to the coast, but my buddy Kevin over at the Boiler Plate Crab & Co. has them year round no matter where you’re located.
Until you’ve tried Chargrilled oysters you haven’t lived. Grilling oysters is simple all you need is a hot bed of coals, some fresh out of the sea oysters, and lots of well-seasoned butter. It only takes a few minutes to grill these oysters and you might as well do several dozen because they will go fast!
Here’s my recipe for Chargrilled Oysters:
Chargrilled Oysters Ingredients:
- 1 Dozen Raw Oysters
- 8oz Salted Butter softened
- ¼ cup Grated Pecorino Romano Cheese
- 2 Cloves Garlic minced
- 2-3 Lemon wedges
- 1 Tablespoons Italian Leaf Parsley
- 1 teaspoon Killer Hogs AP Rub
Directions for Chargrilled Oysters:
1. Prepare Big Green Egg or other charcoal grill for direct cooking temperature should be 475-500⁰.
2. Allow the butter to soften to room temperature. Once soft mix in the remaining ingredients.
3. Place freshly shucked oysters directly on grill grate and cook for 3-4 minutes just until the liquid in the oysters starts to bubble.
4. Spoon 1 heaping teaspoon of butter mixture onto each chargrilled oyster.
5. Cook an additional 3-4 minutes or until the tops are slightly browned and the sides of the oyster start to curl.
6. Carefully remove from grill, top with a squeeze of fresh lemon juice and hot sauce. Enjoy!

Quick tip. Lay out the oysters starting at 12 o'clock clockwise around the grill. You will always know which on was put on first. Handy tip for cooking many things.

Made these oysters tonight... delicious. Also cooked shrimp with this same butter sauce but used zatarans instead of the other rub. Yum!

Oh boy thanks for this one. I have been missing char grilled oysters since eating at Dragos in Metairie La. I still stick to the months with an r in them .. yeah I am old fashioned. I think October on they get plumper and sweeter.

Those look so good. I love grilled or fried oysters. Once a year or so, I'll make a big tomahawk steak and I'll deep fry some battered oysters and throw em on the steak with some lumb crab meat and bernaise.

I just spent the day out harvesting in kyaks and after cleaning maybe will try some of this. Hard part is wild ones are so misshapen and lumpy even some with barnacles I dint think they'll sit Very flat on the grill

Looks killer! When you shuck raw oysters how do you know if they are not dead? Like when you steam or grill them, they tell you not to eat the ones that dont open.

If the shell is closed tight - they are alive.

instead of in the shell like that. You should make a piece of channel and close the ends off and make it about a foot long and you could put 2 to 3 dozen oysters on it.

You'll know if they're dead if they look flat or discolored, live ones will be plump with clear liquid.

You scrub the outside of them with a wire brush then when you open them up and you have two choices you can either rinsing mouth with a little bit of water and lemon juice or you accept the risk of having some sand I usually go with the ladder by the way

I'm using a rivergrill 37in smoker and I'm using the temp Guage that's built in. I think I want to start using mainly wood, IMO I think I used a lot of coal bricks for a 5hr smoke of ribs using your technique. They turned out great, where do you purchase logs to cook with, all I see are chucks for smoking. what is your advise. could you do a video on temp control with coal and wood??? I think my smoker is cheap $125.00 and I don't want to use that much fuel for 5-6 hr cook, any suggestions???

Try Western Wood Products; they sell kiln dried splits I'm pretty certain. Perfect for stuck burning. Make sure you have good air flow. The fire Ned's oxygen to burn properly and produce the right heat for cooking. If your constantly having to feed fuel its not burning efficient.

And invest in a thermometer you can set at rack level. It doesn't have to be expensive. The cheap oven thermometers will work in a pinch. Set it right where your food goes so you know exactly what the temp is.
