It's not oil, he(the chef) specifically said that the meat should not be cooked in any cooking oil what so ever, that's animal fat that they use , that is the key secret he said to cooking this dish

The only Karahi that does not contain curry spices. No coriander (cilantro), no ginger, no garam masala. This is just next level. I regret not having this when I was in Pakistan.
