6:36 why are there two grass blocks on top of each other? Shouldn’t dirt blocks spawn under grass blocks?

you're right, but it's just the random tick speed and the dirt below the grass just had the chance to instantly turn into a grass block. basically, there's a random speed for dirt turning into grass, and the dirt below the grass just happened to turn into grass as soon as he mined the block above. if you rewatch it you can see the dirt flash before growing. hope this helped
