Gonna have to make these babies!! We ate a lot of pinto beans at the beginning end middle of the month, didn’t matter. We were dirt poor living on a 100% disabled veterans benefits. Back then a lb of beans were 25 cents and fat back just as cheap, fed 6 of us along with a big cake of cornbread.
I’ve never had these nor have I ever seen it on a menu. But it sounds delicious…like you said…economical meal late in the month. My fave are cheese and onion enchiladas. Mmm mmm good!

I threw away a whole packet of corn tortillas before because I was dipping rather than the method you demonstrated making me frustrated.
