¼ cup olive oil for oiling bowl
½ cup shredded cheese muenster, provolone or low-moisture mozzarella for stuffing knots

4 tablespoons butter
3 garlic cloves minced
¼ teaspoon red pepper flakes
½ teaspoon salt
1 teaspoon Italian seasoning

¼ cup grated Pecorino Romano parmesan or Asiago
3 teaspoons Italian flat-leaf parsley chopped finely
