I wanted to share this recipe that I cooked today:) Today, I ate stewed butternut squash, onions, jalapeno peppers, allspice, cinnamon, nutmeg, cloves, on white rice (but it would be good with any grain, especially oat groats I think.) It was probably the most delicious thing I have EVER had! Sort of like a spicy-sweet pumpkin risotto, but with jasmine rice. You simply have to make it. Here's the quick recipe - a pound of butternut squash more or less a pound of onions more or less jalapeno peppers to taste cinnamon allspice clove nutmeg water or broth necessary for sautéing - about 1/2 cup cooked grain of any sort (my serving suggestion, optional) I chopped the onions and tossed them into a saucepan. The butternut squash was chopped in 1 inch pieces with the skin intact. Jalapeños chopped too. The onions and peppers were at the bottom, topped with the butternut squash, since the squash would be more likely to stick. I simmered it dry until the onions started browning, then added 1/2 water and simmered it covered until tender about 15 minutes; I increased the heat to drive off any excess water, stirring if needed. Then I added the spices to taste, from most to least in this order: cinnamon, allspice, nutmeg, clove. Then I allowed the pan to sit covered for 30 minutes to allow the flavors to mingle. I mashed it coarsely with a wooden spoon, and served it with cooked jasmine rice. I don't make true 10/10 recipes often, but this one was a REAL 10/10 even without the salt oil sugar. And I'll be sure to print this comment out, so I can make it again and again!!! I also assume this would be good with any squash or pumpkin, but I haven't put that to the test yet;) I also think red bell peppers would go devastatingly well, as would fresh tomatoes or eggplant, maybe corn too;)

@@stephikarolyi8706 Yeah thanks! It's so good, I'm making more of it right now! I put some rosemary, thyme, and garlic this time, in addition to the other spices. It smells like Christmas dinner, omggg:)

@@florangelahinckley8455 Salt would taste great! I might add a few grains of it at the table, but I go REAL easy on it, since it triggers my asthma and raises my blood pressure. Beet greens are also VERY good as a substitute for salt in this dish.

I find it so ironic that Heather and her mom and dad...all 3 have the raspy hoarse quality to their voice and i keep wondering if they all just talk so much that their voices are on edge.....

I love bean juice and I never throw it away, hot or cold in a salad, it's so flavourful, it's a shame to discard it. I use a stock cube and water instead of buying broth

I have gastroparesis and cannot eat anything with citric acid. Tomatoes are very high acid and I can't eat them. I'm always befuddled on what to add that would get the same results as tomatoes. I love tomato based dishes but my stomach just can't handle them. I love simple recipes too! Lots of peoples having gastritis and stomach issues after covid! I have been eating starch based 15 years.

@@happycook6737 I borrow all their books from the library, because I find it easier to read the book than on an I pad. I don't like the way she cooks though, I never buy can beans or anything in cans. My last product to drop was tomatoe paste. It's easy to make my own. I would never use stock in a box. People think companies will tell them the truth about what's in a box. When you put onions carrots and other veggies in a pot with water, there is your stock very easy.

And there is the problem - right there. Dr McDougal says every other year he may have a piece of turkey and it’s hit on negatively - this is why healthy eaters are not taken seriously. It’s ALL or nothing for some😢

The water from the beans might not be good to make meringues. The Indian chefs who cook their beans from scratch usually show you how to make the meringues from scratch.

I'm vegan and have gastroparesis I will never go back to the old way of eating. I just can't eat raw but don't seem to have a problem with Whole Foods and carbs! The bloating is bad for me but it is very strange beans seem okay for me. It is the acid I have to watch, vinegars, tomatoes, citrus, anything fermented will destroy me.
