Wow, I've been thinning my whites with a fork for as long as I can remember. I did it because i wanted the whites cooked completely - no runny stuff around the yolk. Good to see someone else doing it.

I never knew I could do that! I'd flip them but the yolk would break. I'd cover them and accidentally cook the yolk. Can't wait to try this.

I've never like fried eggs with crispy bottoms and edges. For me the texture reminds me of thin crunchy plastic. Give me a gently cooked over easy egg every day of the week.

@@Koji-888 Not a super fan of fried eggs. If I had a fried egg sandwich I would peel the crispy plastic edges off the egg, then it was edible. I would actually prefer an over medium egg in a sandwich or burger. It's the texture of the egg shown in the video I can't stand.

​@@Koji-888'Over easy' is also a fried egg. You can fry eggs in all manner of ways. My favourite is to fry in butter on a low temp, then flip for the final 30 seconds. The only browning comes from the butter and it's, frankly, delicious

This might be the first time I've EVER seen someone use a metal utensil in a non-stick pan without cringing. The one non-stick pan that I own is known as the "egg pan" because it just makes some egg things much more foolproof. (YES I know that you can do everything with stainless and cast iron/carbon but sometimes I'm hungover and my egg game is not on point. Don't @ me.)

Not to tell Chef John how to cook but the pan and seasoning of the pan to non stick is EXTREMELY Important. I have an entire video folder saved of Chef John videos and think of him every time I pull out my cayenne jar

Yess, been doing this for years! I hate the thicker white around the yolk that has a slimy texture. Ruins the whole egg unless you overcook the yolk

Don't use metal utensils on non stick pans my friends! A plastic or rubber spatula is the tool for the job and won't mark up and release those funky nonstick chemicals into your food . 😊👍

Now science says nonstick anyway releases chemicals, no matter what you do. Better learn to use seasoned cast iron or steel if you want a chemical free fried egg.

I use stainless steel and cast iron. if you season them proper, they become nonstick and work very well. Plus the flavor is much much better.

you can combine the two methods, i always do this trick and have for years, if it still needs more on top then the lid goes on!

Instead of a lid you can use your plate… just wipe the condensation off the plate. As a bonus your plate is heated.

Try flicking some water on the pan then cover it. The light steam with slightly cook the top a tad bit in short time

Both ways are good IMO. Softer is a more European style and the crispy bottom I saw all the time in Asia.

Use the rounded bit of shell you've got from cracking the egg. It's quicker and there's no risk of damaging the pan.

@@noellerubel4686They mean use the shell to break the edge of the white membrane, not use the shell in the food itself. In the video, we see a metal fork in a non-stick pan, which is a universal no-no for most people. Chef John can probably get away with it, but most folks shouldn't try it so... again... When you break the egg and drop it into the pan, _use the shell to break the white membrane (rather than using a metal fork in a non-stick pan), then discard the shell as usual and cook the egg as usual._

Haven't seen you in a while, love your videos, could you make one for a fried egg, but firm whites which are not browned, and a yolk as decent looking? It's always a tad bit of a struggle to get perfect eggs, especially if your like me and you hate, no, detest any form of crispiness but want that firm slightly rubbery white, and a nice runny yolk, which is best for burgers, I dont know about you guys, but I dont like uncooked white slipping all over my burger, thats the sauces job. Thank you, and many good videos from you for the future, blessings Chef John ;)
