Uncle is rude and inconsiderate to people especially the female chef that is no longer there and his wife. The Chef has corrected him several times to stop talking or don’t say that. Embarrassing 😅

In Easter Europe in the 80s, we used to watch kung fu movies from China and became interested in martial arts as kids. Today we are following Uncle Wang Gang and getting the inspiration to eat and prepare Chineese food.

京醬燒豬肉 肉丁 配白飯/做成包子餡材料 肉絲 配潤餅 肉片 配吐司/饅頭 都不錯吃 不過蔥薑水 製作的醃汁 我會用 調理機將蔥丁薑片分開絞碎成末 第一次加水 攪拌後濾布濾出 一次 剩下的粕加些酒 攪拌後再用濾布濾出一次 最後 蔥薑粕加些油攪拌細目濾網濾過粗粕後備用 前兩次 蔥薑水/酒 混合經調味後用來醃肉 最後的 蔥薑油與蛋清/太白粉 黏液 用於 肉入油鍋前的"上漿"

For North American audience, this video is the traditional dish that inspired Kung Pao Chicken. The dish in Chinese is called Jiang Bao Pork, but Chef Wang noted that one regional variant uses chicken for Jiang Bao Chicken. "Jiang Bao" phonetically is quite similar to Kung Pao.

@@Carniak I think not exactly hoisin, but fermented flour paste, which is a bit less sweet and a bit more complex. Very similar though and can swap "in a pinch."

The first one was sweet flour paste - here's what the internet says about it: "Tianmian sauce, also known as sweet bean sauce, sweet flour sauce or sweet wheat paste, is a thick, smooth, dark brown or black paste with either a mild, savory or sweet flavor." The 2nd one looked a lot like doubanjiang, which is a Sichuan staple, and also sometimes called "Chinese sweet soybean paste", if the internet is to be trusted :P

@@overseastom @433 -900 The 2nd one is not doubanjiang (though you could use it if you want a spicier version of this dish). For this recipe it is just regular red soybean paste (黄豆酱). You're right about the first one, it's the sauce for peking duck (甜面酱). Should be able to find both in a Chinese supermarket. You could show them the Chinese names I wrote to get the correct ones (those are the same names used by chef Wang in the video).

If you can not find them in Asia store, you can use Japanese miso and surger instead.
