A fairly short session at the Portland end of Chesil from 11pm to sun up. Neap tide with lots of weed & spider crabs made things a little tricky, but got a few. Some baking this week with home made Brioche & some mayonnaise too, recipe below….
BRIOCHE
•600g bread flour
•25g fresh yeast, or sachet of dried
•50g sugar (optional)
•15g salt
•5 eggs
•approx 80ml milk or water
•225g soft butter
MAYONNAISE
•1 egg yolk
•1 dessert spoon Dijon mustard
•1 dessert spoon white wine vinegar or lemon juice
•100ml (ish!) vegetable oil
