Jack Scalfani shares his favorite Southern dessert.
Here is the recipe:
Ingredients
* 1/2 cup butter
* 2 cups white sugar
* 1 teaspoon vanilla extract
* 4 eggs
* 1 tablespoon cornmeal
* 1/4 cup evaporated milk
* 1 tablespoon distilled white vinegar
* 1 (9 inch) unbaked pie crust
DIRECTIONS REVISED AS OF 3/26/15. BAKING TEMPS ARE CORRECT NOW.
Directions
Preheat the oven to 425 degrees F (220 degrees C).
In a large bowl, mix the butter, sugar and vanilla together. Mix in the eggs, then stir in the cornmeal, evaporated milk and vinegar until smooth.
Bake for 10 minutes in the preheated oven, then reduce heat to 300 degrees F (150 degrees C) for 40 minutes. Let cool. Cut and top servings with whipped cream. You will think you have died and gone to heaven.

@Fitange I just used regular old corn meal. I am not sure if you can replace it. Try it and see. it's such an easy pie to remake. I did it 4 time just in the filming of this video. LOL

I live in Nashville and every time I have company from north of the Mason-Dixon line I have to take them somewhere to get chess pie. My sister and her husband were visiting me from Ohio and I took them to Elliston Place Soda Shop, which is a "meat 'n three" restaurant. She also had no idea what a meat 'n three restaurant was. It's a place that specializes in home cooking and they serve a meat AND three vegetables. She was looking over the menu and I told her she had to try the chess pie, which she had never heard of. She said that she had just been looking at that pie on the menu but she thought someone had just misspelled a word and it was really a "cheese" pie!! I have always heard the "jest pie" story and that is the only one I have ever heard as to the origins of the name chess pie. However it got it's name, it is delicious. May I suggest that you hide any cracks in the piece of pie with vanilla ice cream instead of whipped cream....especially if the pie is still hot! YUMMY

Jack, vinegar is included in this recipe so it sours the milk slightly. It then acts as a substitute for buttermilk. :) Incidentally, another name for chess pie is buttermilk pie. At least, that's what they call it in my part of Texas, lol.

@zeldafreak701 it should be cooked at 350 for one hour. if it still looks liquidy then put back in for about 10 more minutes. It should be more custard inside. it will thicken when cool.

@innhoster evaporated milk is in a can and you can find it on the baking aisle of your supermarket. 60% of the water has been evaporated out of the milk and it's creamier. there is never a stupid question with me.

@dimitrizeman100 look in the frozen door section next to frozen dessert pies. I used Marie Calendar's deep dish pie crust. 2 in a package.

@derekbegins the recipe I had said cook at 425 for 10 minutes then 300 for 40 minutes. The first two pies came out like the blooper. The third pie came out the same way after cooking longer. So I finally researched chess pie cooking times all over the net. I nailed the last one at 350 for 1 hour. Yeah!!!

I am from TN and have eaten chess pie my entire life. The origin of "Chess Pie" is not known. The version the patron tells is the prevailing theory because it makes for a good story. I find it ironic the he mispronounces the word "mispronunciation".

Yea, Tennessee! I would not want to live anywhere else. Jack, I love your videos and the fact that you admit to bloopers. First time I’ve heard a you tuber admit that. You are a breath of fresh air. I'm making this pie for Pie Day today! No other pie can represent Pie Day better than "Just Pie"! :D I'm going to be making my own crust though because I make pies so good, no one believes me when I tell them I made it from scratch when I use a pre-made crust, they accuse me of reheating pies bought from a professional bakery or grocery store!

Made 4 pies, because “something was wrong with the recipe”. Sure, you would know. Master baker! You can’t just “make double batches” by doubling number of ingredients for pies and cakes and expect they’ll work. Also, you don’t appear to know how to make a custard, so it broke on you and then you blame the recipe lol.

@anrol95 You can look online. you can take milk and cook some of the water out of it. That should work. 60% of the water is taken out of the milk. That is what evaporated milk is.

@radiculousraneem no. Evaporated milk is thicker. you can buy a can of it at the store on the baking aisle.

James Beard (as in, the food historian), said Chess Pie originated in England. Apparently, all the American South did was add some cornmeal to it.

Mark F I've tried condensed milk before. It made my pie very creamy. I liked it. Just adjust the sugar in your pie because condensed milk is already sweet enough and you don't want a very extremely sweet pie dish. I've also used Almond milk or regular milk. It still came out tasting delicious.

@CityRuler1 my measurements stay the same. if you want things in other measurements then use google. For example. I use cups. you may want grams. If you can follow my other measurements tsp, tblsp, etc. then yes it all stays the same.

@Meekah88 the molasses in the brown sugar would affect the way the pie is. Brown sugar works completely different.

All the homemade chess pies I've tasted, they ALL tasted too much like eggs. The only chess pie I ever liked were made by Busken's and Graeters.

Never knew what Chess Pie was or even knew it existed before this video. Has a recipe for it AND the history with a nice little story attatched? Love how personal these videos are. They aren't professionally made but made by just an Average Joe with a loving sense of Humor.

you almost helped make my point, i may have not worded it good. but yes your heritage may be 100% one thing, but you yourself are both your heritage and your nationality, like if your american, and you have a great great grandson, hes gonna call himself 100% american most likely, with some german heritage(example) so there is a line in which you have to combine both, as thats what you are, you are a product of both your parents heritage and your country.

Negative. You're confusing citizenship and paperwork with heritage and genetics. Biologically speaking, if both your parents are from Italy, you are still Italian genetically and heritage-wise 100%. As you grow up in another country, yes it will influence your outlook, but it does not change your lineage. This is what Jack and the other poster of Korean descent are referring to. You are crossing two completely different and unrelated things.

Jack, I just wanted to let you know that while that guy's story regarding the origin of Chess Pie is amusing, it's not accurate. The word “chess” is an Americanization of the English word “cheese,” referring to curd pie. Basically, the Chess Pie is a cheese-less cheesecake

just a little tip, you should bake the pie shells for a few minutes before putting the mixture in it (and then bake it all together)

I was talking to my sister last night and found out that not only have she and her husband been going through your shows since I recommended you to them, but that my sister also subscribed to your vids. It was the first time she had ever subscribed on youtube. We found this amusing, since yours is the first series I've ever subscribed to here, too.
