Today we're making Chicken Vesuvio. This delicious chicken and potatoes dish was created in Chicago and isn't too well known in other parts of America. It has roasted potatoes, seared chicken, and lots of garlic in a tasty white wine lemon butter sauce with peas. I hope you enjoy it!

I agree. The only pricey things Jim uses are the oil & cheeses. Those two things have to be good or the meal doesn't taste the same. Everything else is either already in our kitchens or is easy & cheap to find.

@@dee_dee_place I'd add panchetta and guanciale to that list, but apoart from that, I agree. I mean that's the thing, you don't need fancy ingredients if you know some basic cooking tricks. Like in this video: Get a good sea on the meatr, use the oven to concentrate flavor, melt some cold butter into sauces to make them thick and glossy. It's as easy as that.

OMG this was so easy and amazing that my mom, who hates chicken and butter LOVED it. I anticipated that no one would eat it so I also made your chicken with garlic and mushrooms recipe and everyone loved it! I've been in a lot of pain lately so actually being able to cook a delicious and healthy meal has been challenging. Total winner on both tasty dishes and no pain flare ups!😄👍👍

We had this most Sundays growing up in Chicago in the '50-'60's. We only knew as Italian roasted chicken. My mom added carrots and onion chunks to the potatoes.

I'm from Chicago - this is very close to what my Dad made in the '70's. He used a big roasting pan and there was only garlicky-chickeny oil left on the bottom to sop up with bread. That was the best part. Pretty sure he also used rosemary.

M-m-m can almost smell it. Chicken and potatoes is awesome, adding peas to a sauce is a can't miss. I've made something similar but not with all those ingredients at the same time, usually in one pan on stove top or in oven. I'll give this a go, we just resupplied our chicken stash with leg 1/4's. Like I said in your community post, never paid attention to the music, which is fine because it's way in the background and not constantly playing. The sounds of your cooking is the music for me :o) BTW, James is an honest young man, my compliments to him and his parents! Thank you. Now I see your Easter roast lamb video, I must watch it! Thank you.

I have also seen this dish individually plated with a generous serving of mashed potatoes shaped to resemble a volcano. The saucy peas are spooned into the shallow crater, spilling down the sides, with chicken at the volcano's base

OKAY... in the region of Sicily where I come from (Siracusa), the liberal use of oregano in any dish that contains liquids... especially lamb... is called "spezzatino." When we add potatoes etc, we call it "ghiotta" as a style of cooking. So was this dish "invented" in Chicago? Let's get back to the roots and we'll find all these recipes in the annals of our ancestral history... and that goes for any culture. Thank you for the clear and simple way you explain these recipes. I'm sure a lot of timid cooks will be encouraged to try these recipes because you explain them so clearly.

I just made something vaguely like this, inspired by this, but with chicken breasts instead of thighs cuz the roommate doesn't do dark meat, and I added rice. Also I used a can of peas instead of frozen, because I honestly can't tell the difference. Peas and potatoes are a great combo. I didn't use as much oregano or garlic, but I used more than I normally do and the results aren't bad. I mean they're NOT what James can make, but I'm a relative newcomer to cooking in my own kitchen. I consider it a personal victory when I finish a meal without setting the house on fire.

You made this recipe a lot more complicated than it really is! Season (whole) chicken pieces with garlic, Italian herbs-and salt, and put in a large deep baking dish. Add wedge potatoes around the chicken pieces. Drizzle olive oil. Cover lightly with foil and bake until chicken and potatoes are cooked. Uncover, spritz generously with lemon juice and broil until chicken pieces are crispy. Peas are optional. Easy peasy!

As with all of your recipes this was so simple and delicious 😋... however... mine had a bitterness to it, not sharp or sour... bitter. It was still great but my other half doesn't enjoy bitterness at all 😔 any ideas? I don't think it was the lemon... maybe I over cooked the potatoes or the garlic? Thank you in anycase for your delicious, warming recipes/videos 👍

I've made chicken Vesuvio plenty of times but I got my recipe off of a America's Test Kitchen. Your version looks pretty good too it's basically the same but without the peas

FYI. You really can't contaminate your salt. Nothing can live in it. Nonetheless, putting you salt in a small bowl makes sense just to keep it looking clean.

So I would like to know the advantage of using the wine. In my mind it makes the dish taste winey even though I have eaten food with wine and it doesn't taste like wine but it still puts me off. Does it make the sauce more complex?

Wine adds additional flavor to the dish. That said, you can substitute with chicken stock if you don't like the taste the wine imparts.

This looks really good, and the taste tester gave it a 9, so I know it was. On a side note - have you never seen the Sopranos? Just so you know, Vesuvio was a mob restaurant in Jersey, not in Chicago. LOL

I use to eat this dish at an Italian restaurant in the Chicago Suburbs (Gattos) and it was one of my favorites. I haven't had it since I left 6 years ago and now I get to make it at home . Thanks for the great food and your great teaching skills!

Chicago Italian-American here. This is the real deal. One of my family's favorite recipes! I'm so glad you discovered it, and showed everyone how to make Chicken Vesuvio! Looks delicious as always. And you've redeemed yourself with a " 9 James" rating. One tip I've seen on other shows, to prevent touching a still-hot pan handle, is to leave a kitchen towel on the handle after removing the pan from the oven.

If you're venturing into Chicago food, try Chicago tavern-style pizza. I grew up there, and the thing they call "Chicago Style Pizza" is absolutely NOT what true Chicago style is. The square-cut thin crust pizza is true "Chicago Style".

Absolutely. Trying to get non Chicago people to understand this can be exasperating. Growing up 70s and 80s, Jefferson Park NW side, never had deep dish, barely knew of its existence. Love deep dish too, especially Malnatis, but, as you say, thin, thin crust "tavern" style was it out in the neighborhoods

It's not the same thing, for sure, but when I'm missing Chicago thin crust here in Philadelphia I'll order a greek-style pizza and have them cut it into squares. Out there, Aurelios was my favorite...I wish it were here, but pizza styles only migrate to the south and west, it would appear.

@@uzi316 I grew up on the NW side, Montrose and Cicero. Had NO deep dish in the area except Suparossa on Central. Was not a big thing, most neighborhood joints only had thin crust. Had to go downtown or out to Lincolnwood to find deep dish, 70s 80s. Way it was. I never had deep dish until I was 17-18 years old. Yes, both are Chicago styles, but for many years, tavern style was dominant by far. Over time, deep dish has become the thing because of national exposure on travel and cooking shows, and for those of us of a certain age who actually grew up in the city, it has taken on a touristy aspect. My mother used to make this dish, but put potatoes, garlic and peas in a roasting pan all around a whole chicken. Nothing was pre cooked. Drizzled everything with olive oil and then added her seasonings, salt, pepper and oregano. Then put it in the oven. Delicious every time. I also like your version of this and I will try it next time. You have a great kid there.

"It might splatter all over your really nice flannel" made me LOL. There's a restaurant in Hackettstown, NJ that has chicken Vesuvio and it's totally different, but really good. This looks amazing too. Can't wait to try it!

I thought the only people who referred to their flannel shirts as “really nice flannel” were those of us who reside in the Pacific NW. Happy to know I’m wrong. Dish looks amazing as usual.

Cooking the potatoes separately is where I was going wrong (recipe from a VERY wellknown but now defunct cooking magazine) . And the skin always turned flabby.

@@Roheryn100 I've had that issue too!!...I like that he roasted separately...High temp/bottom rack for the crispiness. Jimmy added close to end...and kept combined ingredients mostly dry oven...adding sauce at end. I've done all saute first than oven finished...I like the texture here!!

Put a kitchen towel on a HOT handle. I fire people on the spot in my kitchen if they forget to do that. Someone can get seriously burned if they don't know the handle is hot. Good rule for the home cooks as well. Keep the kids and other family members safe.

I picked up Chicken Vesuvio at Standard Grocery in Oakbrook Illinois, I had never heard of it before. I was visiting, I am from the south. I was addicted from the very first bite. I have traveled the world., I have never seen it offered anywhere else. It is truly addicting and this recipe is easy and delicious! I give it a 10!
