Jun Nakajima, CHEF AND FOUNDER
Raised in a restaurant household, Jun's love for food began at a very early age. His parents have owned and operated a Japanese restaurant for over 30 years where he practiced and honed his culinary skills.
Somewhat forced upon, he was taught the art of sushi making in his teenage years. He quickly fell in love not only with the art but the endless opportunities that came with it.
He has traveled around the globe to try different styles of sushi, most importantly to Japan.
After college, Jun had taken an opportunity to live in the motherland of sushi, working for something completely outside the culinary field. In those two years his appreciation of the culture, people, history and food deepened.
He became addicted to the food scene and found himself traveling from one end of the island to the other, eating and drinking some of the best foods and drinks he's ever had. This experience became the seed which eventually bloomed to become The Sushi Man.

Prosciutto sounds like it would be great with sushi but I guess it depends on the type. Some are definitely really salty and I can see it overpowering everything else. Great idea though, especially using it to wrap the sushi. 👍

I just got your book off Amazon and am excited to start making Sushi of my own. The first Sushi will be probably using imitation crab meat. I am sort of apprehensive about the source of fish and the possibility of parasites! Did not know this until I watched a few videos about the matter. My second choice of protein will probably be smoked salmon. Thanks for your book, I look forward to reading and practicing it! Have a blessed day! 🙏🏻

Hi Jun great idea with the "will it sushi?" Series. I've been making rolls successfully without fish and am interested in new ingredient combinations that would make good rolls. I do rolls like avocado and-peanuts/Roasted red pepper/banana pepper/cream cheese/bacon/tomato/ cucumber but otherwise I'm not that creative. If you have any ideas I'd love to see what you think would a cool new roll. Just a thought! You make amazing content and I appreciate your channel!!

Those all sound like great sushi ingredients, I've never tried banana peppers but I love them! I'll keep exploring with this series and hopefully you can get some ideas from it.

We actually used to use tamago as an ingredient in our California Rolls back at my parent's restaurant, it was kind of our signature way of making them. It's really good!

Jun, I love a tempura chicken roll - why not chicken from my favorite fast-food place? lol Their sauce would be better with an addition of wasabi IMHO This was fun - How about The Cheesecake Factory's Thai Lettuce Wraps... it's a natural, right? =]
