Chicken and Egg Adobo 🥚🍗
Ingredients
- 4-5 chicken drumsticks
- 2 tbsp peanut oil
- 150ml (5 fl oz) Filipino soy sauce
- 20 black peppercorns
- 2 star anise
- 3 bay leaves
- 300ml (10 fl oz) water
- 1 head garlic, peeled and finely diced
- 100ml (3.5 fl oz) coconut vinegar
- 4 soft-boiled eggs
- rice to serve
Method
1. In a large frying pan or pot with a lid, heat the oil over medium-high heat. When hot, add the chicken and seal on all sides.
2. Add the soy sauce, black peppercorns, star anise, bay leaves, and water. Bring to a simmer, cover, and cook for 15 minutes on medium-low heat.
3. Add the garlic and cook for a further 10 minutes. Then add the vinegar and reduce the sauce by half. It’s important not to cover the pan after adding the vinegar to burn off some of the acidity.
4. In the last 10 minutes of the sauce reducing, add the eggs and continue to cook for 10 minutes on low heat, turning the eggs so they get an even colour.
5. Serve with rice and enjoy!

I love the variations in adobo, you can adjust things to your tastes. My dad is from the Visayas, so his adobo has less sauce, almost dry. You can make more or less sauce, use chicken as well as pork, and even make veggie versions with veggies like kang kong.

Are there any more veggies typical to add to this dish? Love trying new recipes, but so often I find them just discuss the meat and rice/carbs like Andy does here. I need nutrients lol

@@robertbach3592personally it does really well with mushrooms. Doing it with eggplant is a little trickier but worth the effort. Yoh kinda wanna toast it a bit first before simmering. You can also do it with tofu or seitan but I’m not a fan of tofu. If you occasionally eat seafood it does work well with squid and fish. I think I’ve even seen a mussels version. Super versatile. With or without onions or coconut or turmeric or ginger or squeeze of lime or chillies. Soupy or syrupy or almost dried up but sticky sauce etc . Research and give it a few go! 😊

​@@robertbach3592 in our family, we add potatoes and bell peppers or if you want it a little sweeter we add pineapple chunks... in other provinces, they add coconut milk or turmeric (replacement for soy sauce).. You can add string beans too..

@@beafraidofinsectattack Filipino adobo is prepared with vinegar and soy sauce. Some families keep it simple with vinegar, soy sauce, garlic, bay leaves, and black pepper. Others add fresh ginger or coconut milk.

The way some of us local do it is marinate the meat (chicken or pork) in soy sauce, garlic, pepper corn, laurel leaves and a bit of calamansi juice or citrus. Leave it overnight, then that's the time you fry it, until the meat changes colour, then pour in the marinate. You can also put fried garlic chips when you serve it.

Yeah that’s the way I do it too. Though I also add turmeric and ginger makes it more tangy than too sweet or salty. Bloody delicious. Btw my Aussie hubby gets upset if I don’t do the garlic chips and garlic rice. 😂

Marinating the meat is not necessary. But yeah, depends on whose cooking tho. Andy has a video where he marinates the meat first before he cooks it. I think this video is an another version of how to cook an adobo. Taga Visayas ko gleh ah para claro ta d tanan

Ngl, as a filipino that's spot on how we usually make modern day adobo. For me I usually add the vinegar at the start to burn off some of the ascetic acid. Start slow and when everything is cool I increase the heat to crisp everything more

Look at you going provincial old school with the eggs! None of my aunties cook, not well. 😛 Mainly the uncles. But I am an Aunty too so yeah my adobo is freakin delicious. 😂 I started adding eggs to my adobo again not long ago. That and potatoes. I also add a decent amount of turmeric and ginger to make it more “healthy”. Kinda a hybrid of regular adobo and adobong dilaw aka yellow adobo. You use turmeric (sometimes ginger) instead of using soy sauce. It’s delicious and great to mix it up. Didn’t think I’d see this many versions of adobo on you channel but there’s so many and you know how to keep summon the Pinoys with your amazing recipes. Thanks heaps Mate/Pare. 😃

I use the 3 dark sauce on my adobo, worcestershire sauce, dark soy sauce and oyster sauce. then the rest of the ingredients minus the sugar.

I'd love to try authentic adobo. Filipino cuisine is surprisingly hard to find here in Kuala Lumpur when Philippines is nearby. The only time I had adobo is when I tried making it on my own, and while I liked it, it wasn't popular among my family members.

in Malaysia, we call this “Ayam Masak Kicap”. the end result almost the same. The chicken can be either half-fried early before mixing with the gravy. Or just put the chicken when the gravy started simmering.

Love that you made this! Just add onion though! Another way you can do it is by using pork and what my family and some others I know do too is we just chop up the pork and everything else, add it and all the ingredients into a pot and just leave it on the stove to cook until the meat is ready 😄 Then after it’s cooked, if you feel like it, you can always fry the cooked pork and it just takes it to the next level 🙌

Awesome. Not many non Filipinos get that. The vinegar should be placed last. If you want to preserve the food but don't want a vinegary taste. Don't stir it, let it simmer and evaporate for 5 mins. But if you want to preserve the food way more. You can stir it but it will have a vinegary taste to it.

Filipino Pork Tocino... thinly sliced and marinated and done on the barbecue, it's like candy. A whole roast will be consumed in minutes. Have to try it. 😂
