my grandmother, who was born in 1899, made real food. She didn't know anything different. I'm sooo fortunate she taught me her 'depression years' tricks when I was young and I still use all her knowledge today. The things you are teaching with these methods are methods she taught me decades ago and I am so glad you are out their to teach the younger generations. You and Mary's Nest are absolutely fabulous for that. I'm just about to turn 76 and I'm still learning and hope to always be!!😘

Bless you. I'm from the same generation (79 years old) and love to cook (mainly because I can't do much else anymore). I've cooked many involved recipes but sometimes the old basic recipes we grew up on are the best! Like you, still learning.

Just yesterday, my mom dropped off homemade chicken and rice soup to my house because I’ve been sick 😷 I’m 28 now, but she’s been making it for me ever since I was a child and it always makes me feel better when I’m feeling under the weather! ❤️‍🩹

My mom did this kind of stuff for us, until cancer made her unable and then she’d buy and bring, send dad or minimally offer. Enjoy these time; they don’t last near long enough. You’ve got a good one too!

My daughter is 35 and, I still drop by when her, her husband or our first grandchild (now 2 years old), is sick. My daughter had always had my Chicken Soup when she lived at our house before she left for College yet, she just associates it more when she is ill because I always made it for her when she had a cold or flu bug. She never apparently remembered any of the numerous winter soups we had, which were voluminous. Lol

Tasting as you go along teaches you to cook.. add things until it taste incredible, I do that all the time, so no recipe is the same - ever, there is NO recipe... just cook till it tastes good.

I also have a youtube with mostly food (not desserts), because that's what I like to make most. And I don't measure things. I taste along the way and adjust as I go. This is the way I learned to cook. And I can improvise if I need to.

I hope your feeling all better now! It's that time of year that many catch a little bug. I think it's due to leaves falling, cold temps, the heater running without fresh air inside. It just throws us off for a minute. I agree with your Mom, chicken soup is not just comfort food, something about it really helps us heal. Best wishes!

It is interesting how some people learn to cook just by using a system and some must have a recipe in hand. Even with baking I have just about sorted the basics of what proportions to use to skip recipes. I will say my soup tonight needs something I can’t quite put my finger on.

Homemade soups are my jam. I love that you put some lemon juice for a splash of acid. Because I am always fermenting my own salsas, kimchis and krauts, I discovered a few years ago how you can turn just a basic soup into something spectacular by adding some of the fermented brine from any of those. In fact, if you add some of your home fermented salsa along with the probiotic rich brine, you have a very good chicken tortilla soup, especially if you added black beans and corn to the basic recipe. Because I don't want to lose all the beneficial probiotics, I add these brines last after all cooking is done.

I love that you are giving lots of options, like rotisserie chicken, shredded carrots, optional spices. I’ve heard you talk about food access and food education/information in other videos (not a regular watcher, but have seen a number of videos in the other channel) and really appreciate those options being mentioned. Keep doing that please - you are doing your part to spread knowledge! Love the cooking channel :)

Looks tasty!! Hints I use: - pull off as much of the skin as you have the patience to, dice & fry up in a separate pan until crispy then dump skin & grease into the soup. - For 'chunks' of chicken, use breast meat. I prefer tiny shreds, so I usually use thighs. - A touch of white/apple cider vinegar helps the chicken break down, especially the bones - A little 'extra' cayenne in the broth helps clear stuffy noses. - A little extra garlic helps with sore throats - Some frozen peas added in at the last second adds some color and tastes great (Don't add them before the last second or they'll get mushy) - If you're a college kid or in a similarly-restricted cooking situation, you CAN make chicken soup with canned chicken & a chicken-ramen spice pack. It won't have the same depth of flavor, but will still feel really good for someone under the weather.

My mom is not a cook. Her husband cooks for her and she hardly ever cooked when I was young. I started learning how to cook on my own a few years ago because a very sweet and positive RU-vidr that I watch told me to turn my waiting room into a classroom. I really appreciate this sage advice because I’ve come a long way! I’m loving the new channel Jess. Thanks for continuing to inspire this old dog and teaching me new tricks. We've had a lot of soups recently. My Son and I got a really weird flu. The cold part of it was mild, but the pain it caused was brutal. Regardless of the cold part being mild it has lingered a long time. I used gift money to treat myself to an Instant Pot Pro Plus in the sales, and it's been wonderful to just stick a whole chicken in it, have it cooked, and the broth done in a couple of hours. That broth is amazing to have to hand for those soups, and I haven't had to remember to pay attention to it. Even our dog is happy, because she gets it in her dinner too. Got to look after the garden helper lol

Sorry to hear you guys have been sick, my kids and I have had a strange flu also, it just keeps morphing into new symptoms instead of getting better! Lots of stomach pain and sickness, too- it’s ridiculous! Be well ❤

34 years ago my husband and I and our 2 and 8 year old drove from Seattle to California. We spent a night in Oregon where I picked up either the flu or food poisoning. By the time we arrived at our rental house I was sick as a dog, so when the lovely older woman across the street came over with a pot of homemade chicken soup I didn't know if I could even take a spoonful. Well, I had a bowl, and years later I still remember that feeling of life's necter saving me. I think of Betty's soup every time I make chicken soup.

Two comments. One, I'm sure I'm not the only one who really feels it when Jess says, "I bless you" at the end of her videos. It's such an encouragement, and it just lifts my spirit. Thank you, Jess, and I bless you in return! Two, I have a wonderful friend who has made chicken soup for me and my family more than once when someone has been sick, and that's also a blessing, to be thought of and cared for in such a tangible way when you're not feeling well. I hope no one is offended when I tell you she calls it "Jewish penicillin"!

Same. I wish I hadn't been so oblivious when my mother was alive, but I've learned a lot from reading cookbooks and from my cousin and mother-in-law, and from a LOT of trial and error. And now, I'm learning from other wonderful cooks on RU-vid!

I am a pretty good cook, but I have never mastered a good broth for a chicken soup. My mom was a master at it. This came at just the right time because one of my kids requested chicken dumpling or noodle soup for Christmas. I love the tips. I spatchcocked and roasted a chicken after the video you had on it. It was amazing! I watch and love your other channel but I think I like this one even more. You are helping so many cooks and thanks for giving grace to those who don't have access to or can't afford homegrown or organic.

We make chicken soup similarly, but I now cook my rice, grain, pasta or potato add-ins separately, then add them into each bowl of hot soup, even with the leftovers. That way the broth isn't diluted when re-heating. Dried parsley and tarragon at the end are a great flavor bomb. I hope everyone's soups make them feel better!

Same. Leftover soup is delicious but soggy noodles/rice aren't great. It also allows for personal preference and dietary requirements regarding grains.

I worked at Grocery Outlet for my first job in college. I managed to score a box that had a set of cuisinart stainless steel pots and pans. I am -still- using the huge soup tureen that came with it. I use it during canning to make soups, stews, and chowder. I have been on a soup kick here lately. I made chicken noodle soup with bone in skin on thighs. I put them in the slow cooker with a big spoonful of better than bullion and a bay leaf to start. Then I took the thighs out and let them cool after probably 4 to 6 hours and sweated some onions in the stock pot before I strained the broth and added it to my stock pot. I chopped carrots and celery and put those in. I picked the meat off the bones, chopped it roughly and added to the pot. As this is happening I am bringing it all to a boil. I added a package of egg noodles, some thyme and parsley I had dried from the garden, some salt and pepper to taste and then let the noodles cook in it til they were soft. I served it with rolls I made(I use the bread machine to make the dough) The week following I made what my mom lovingly refers to as hamburger soup or spaghetti soup. This starts with a pound or two of hamburger. I cook it and actually brown it. Not til the grey unappetizing "cooked" stage, but brown it like a good seared piece of meat. I use the enameled dutch oven for. I add onions, shallots and garlic to it then some mushrooms. If you want to get fancy, brown some in a separate pan and add them after they brown nicely. I added home canned tomatoes, I used my roasted halves I canned from the garden but store bought diced tomatoes works just as well. Water and better than bullion beef flavor is added now. Bring it to a boil. As it was coming to a boil i added frozen chopped spinach, frozen green beans, fresh carrots, dried basil and oregano from the garden. Then after it boiled I added small ABC pasta I had in the cupboard, but acini de pepe works really well too. Any pasta works even if you have to break up spaghetti. You can add whatever veggies you want to to be honest. It was excellent. My non soup loving husband had seconds. Tonight I made homemade ramen with leftover braising liquid from the pot roast I made on Sunday. Soup comes in lots of varieties and I am thrilled to have soup season. I am currently thawing a whole chicken so I can spatchcock it. Not sure if it will become soup but I am looking forward to it. Sorry I don't always cook with a recipe. My mom, bless her, taught me to cook "by the seat of my pants". I am thankful to her for taking the time to teach me. I share what she blessed me with whenever I can. I made a huge pot of lentil soup a couple of days ago. Lots of veggies, carrots, potato, celery, onion, garlic and rutabega. To get the stock I started by cooking a smoked pork hock for a long time slow. It turned out so good it is such a comfort food. Served with prunes, a shot of balsamic vinegar, and some German bread my friend makes.

My favorite azure saving grace product is the 5 lb boxes of emergency carrots ($8+) and celery ($12) I keep in my freezer.... I freeze my own onions. And minced dried garlic. Canned broth and poultry and frozen veg that takes care of itself on the stove while I convalesce! 7 quarts of soup base in the canner at this very moment. Now, freeze dry the mirepoix and GAME ON!

I just made this soup,(using the last of my beautiful homegrown carrots)but added noodles, thinking my husband would like it more. We both have Covid…me getting it first😖. It is a wonderful soup!! When next I make it, it will be with rice!! It does indeed sooth the soul and nourish the body!! Thanks for sharing Jess! ❤️

We made turkey and rice soup from our Thanksgiving smoked turkey. We made the stock out of the turkey bones and used the turkey we picked off. It was so good! A very basic, but very healthy, yummy soup, no matter what poultry you start with.

I make chicken soup a LOT! Onions, celery and carrots are a must, then I add whatever else I happen to have in the fridge or freezer, even cabbage. I use chicken thighs, simmer about 15 min in the broth then take them out to cool and chop up, and add back in. I have added pasta but the rice sounds yummy. Last night I made a ground sausage and potato soup which was really good and made homemade corn bread with it. I always use my dutch oven and make enough for 3 meals, one for dinner that night and two for the freezer

I never made my own bone broth until you showed it in a video one time and I haven't bought it in the store since. I don't know why it took me so long to do it because it's so easy and so much better tasting. (Not to mention it doesn't have all the added bs in it) Anyhow, I really appreciate you sharing your recipes with us. I've always just made chicken and noodle soup so I'm excited to try it with rice.

Oh! And like my Grandmother taught me, was to ALWAYS... toss in to beginning broth, is a half handful of REAL PEARL BARLEY. This gives added healing benefits and makes your soups taste DELICIOUS 😋 And DON'T FORGET to add a splash of cider vinegar when your cooking bones for stock! This releases ALL NUTRIENTS from the bones. SO YUMMY!

I pretty much roast a chicken a week as a trick to keep teenagers fed. I roast the chicken with veggies in a cast iron Dutch oven with olive oil, garlic, onion, carrots, celery, bay leaf. We eat some of the chicken and then I take the rest of the meat off and make a stock. Then the rest gets turned into some kind of soup like this one, pot pie or rice bowl and often times a curried chicken salad to make sandwiches with. It goes a long way to make meals! I just did all this today and then found this great video!

Jess! My husband bought me one of those CHEAP silicone tubes that you put garlic cloves in and roll them, and it works AMAZINGLY! I use so much garlic in everything and it has been such a help!

I love making chicken noodles soup for my family when a bug is going around. Last week we had a stomach flu and my 2 yr old isn't over it yet, but doesn't want to eat anything, so today i warmed up a bowl of chicken soup and sat down and pretended to eat it and she came over and asked to share it. 😂 i was so happy my plan worked. I'll have to try it with rice.

Made the soup today but did it with rotisserie chicken ⏲ and used 4 boxes of broth to boil the bones and skin for close to 2 hours. OMG. total game changer LOVED IT. THANK YOU SO MUCH for these tips to not have dry chicken and totally turn up the flavor of the broth so much. No added salt reduced salt chicken broth, garlic , black pepper, fresh parsley . Thanks you tube for throwing this channel into my feed.

"support and care for yourself"-i love that. thanks, Jess. i'm a bit limited on oven use right now, and often just poach/simmer a whole chicken in the slow cooker (the stock is so amazing), but this gives me some more ideas for what to do with that after the fact.

I am getting over a cold and have a lingering cough. I made a chicken stew with rice on the side. People cold spoon the stew over the rice or nix the rice like my granddaughter did. It was so good and felt so comforting. I love to put a tiny bit of curry powder in all my chicken dishes. Not too much, as it can be overpowering. I ❤ comfort food.

My kids want my soup when their sick. Their in their 40s. 😊Funny thing is my soup was made from what was in the refrigerator and love. Never the same soup, but they love it.

I've made chicken noodle soup for years and my dad always asks me for it. I tried a pot with a few changes that you showed - browning the chicken first and sauteing the veggies first and it was THE BEST pot I've ever made. I was only wishing my dad could have eaten it. He's 97 and in a long term care home now, but I thought of him and glad I watched your video and will now make it this way going forward. I made it for flu time for the freezer, but it didn't make the freezer. ty

I just made chicken soup for the first time yesterday! I used couscous and today I made orzo and poured the rest over it. This video was great... Makes me feel like I did it right when I was just winging it!

My family is Eastern European and chicken and rice soup with a homemade bone broth is a staple for sickness! Can't remember a time when my mom didn't make it when I was sick, I learned how to make it for the first time in my marriage we both got sick. Usually end up boiling bone-in with skin chicken legs since we keep a stock in the deep freezer as we aren't a large family at the moment! We sometimes do it this way, sometimes we boil the broth then add the veggies and let them boil in too before adding washed rice. Adding bay leaves and a bit of peppercorn into the broth is a life changer! If you have frozen (or dried) dill it adds a wonderful layer of flavor, one of my favs to add to it! I also make it to ease nausea if someone catches a stomach bug, just end up making it more simpler those times

So, basically, you are a friend sitting at her kitchen table keeping her company as she cooks. That is beautiful! A lot of her concepts can certainly be applied to a vegetable soup, too.

Hey Jess, I love the way you make your soup I make my very very similar for me all the ingredients are easily interchangeable so that if my sister doesn’t like this and my cousin doesn’t like that, I can leave them out or I can grind them so small that they don’t know that they’re in there, which is a little tricky. But I think that the meat is always interchangeable whether it be chicken, pork, beef, lamb, duck, goose, Turkey or whatever you have on hand at the time. The broth or the water if you have your own homemade broth you can use all you want for free if you can afford a gallon and a half of store broth then that’s good too. I generally cook the meat take it out, put in my celery, carrots and onions cook them as they cook. They basically release any of the meat that might be stuck to the pot deglazing if you will, the meat goes in the broth goes back in heat it through and you’re ready to go. I generally use some kind of season salt, Italian herbs maybe some basil almost always bay leaves doesn’t make sense to me to use less than five, but I see recipes that call for one all the time I just put in five because that’s me. I have made this when I was so broke that I found the leg quarters for .49 and used them. This is so similar to how I make mine. It just helps when you feel like crap and knowing that it will help your family makes the mom guilt better when they are sick.

My 85 year old mama told me a story about her mama saving her mother in laws life when she was very sick. She put some pieces like a chicken leg and thigh in a mason jar, put on a lid and placed it in a pot of water. Mama said Grandma cooked that chicken all day letting that mason jar float around in simmering water. She then spoon fed my great Grandma spoons of that rich broth and it actually nourished her back to health. This was probably 75 or so years ago. Chicken broth has to be the most nourishing broth you can use when you are sick especially such a rich broth as my grandma made. 🙂

This video was well-timed, Jess! Thank you! When I cooked down the chicken carcass in the light broth, I added a splash of ACV at that time to pull more good stuff from the bones. And about garlic - Honey child, garlic is LIFE! 🥰 We always add in a thumb of fresh ginger (sliced or grated) in our chicken soup, when we add the herbs. When making a gallon of soup, it isn't overpowering, but adds a nice warming spice and is supposed to aid digestion. Lastly, instead of adding additional oil, I usually just spoon off some of the fat that has floated to the top of the strained broth since my stages in the kitchen usually involve longer spaces between steps. Many healing hugs to all in the family who are feeling poorly - and a nice relaxing cup of Chamomile, Jasmine, Holy Basil, or Peppermint tea to everyone else!

I made turkey and rice soup from scratch last Thursday and it lasts us a few days. I'm about to freeze some of the stock. I don't use a recipe either. Sometimes I cream some of it to make it cream of turkey rice. We have been sick too and it really hits the spot.

I keep a whole chicken in my freezer all the time. I have made chicken soup forever when bugs start going around: My kids are grown with families of their own now, but Kevin got sick last week and out came that frozen chicken. I swear by it, I know from experience that it works! Maybe, it is the love thrown into all of the ingredients that helps! I literally throw whatever I have in the fridge or a try at whatever time of year I’m making it. He is well now, thankfully! It s both healing and delicious, so you don’t have to wait to make it! The best part, it will last forever!

I make this on the regular when my peoples are unwell or if we just want comfort food. This is comfort food. This is also delish served with smashed spuds. I learned a few things today with the healing properties of this soup and also about dry chicken. I now realize I have always overcooked my chicken and now I know better. I’m 58. Never too old to learn something. Thanks darlin! Edit: I think this would be really good canned to keep in the shelf for a meal in a pinch. Could you shoot a video canning this, Jess?

I share soup all the time with my neighbours. I always make too much for my freezer absorb. So I share, they love it. The best thing about soup is the bread you can dip in it.. I like to make Minestrone and add orzo pasta... perfect.

I try to always roast my chicken before boiling too. Better flavor, yellowish color that is more appetizing for a chicken soup, lots of goodness doing it that way.

My mother made soup that way, so I do, too! Every time we have chicken the bones go in the freezer for broth. I add grated ginger to mine to zing it up, it is also soothing when you have an upset tummy with your cold or flu. thanks for showing everyone this method, Jess.

My chicken soup is very close to yours, but recently I have started adding a few shavings of cabbage, I tried it once and it was so good, that I add it to all my soups now.

We just finished eating this soup. OMG it turned out wonderful. So much depth of flavor. Lots of flavor! I have always overcooked my chicken when I boil it and never realized it would dry out. We used the spatchcock method and it was truly the best chicken soup ever. We added a package of Reams frozen noodles and they were perfect.

Nothing better than a no-recipe soup to really make me feel cozy and happy on a cold day. I am making a big pot of Tom Kha Gai (Thai coconut chicken soup) tomorrow. I love soup and would have it everyday in the fall and winter but it’s always a gamble with a couple of my kids who struggle with “wet” foods sometimes.

When I discovered a friend “doesn’t like soup” I truly had a hard time comprehending it! I love soup, always have. My husband prefers a more hearty meal, or a sandwich with butter just soup and crackers is a meal, in my opinion.

I love your videos. One tip that I only recently learned is to get a "spider" if you don't have one. You can use it to take out and strain the bigger chunks (discard them) and then when you go to strain the rest of the broth you are only dealing with the small chunks and you don't get the splashy-splashy of boiling liquid everywhere. I use my spider all the time, just used it yesterday to separate black beans out of their cooking liquid and it worked great. Great for deep-fried foods too, of course.

Even me who lives in a tiny urban apartment can make a very nutritious stock, I put it into twist and Lock Ziploc containers and stick it into my freezer and pull it out as soon as I feel that first tickle in the back of my throat. I don’t do grains or else I would be going back to the old standby chicken and rice soup. I loved that soup as a kid

We use summer savory herb for chicken soup. All of the local people use it in their chicken soups and stews. The summer savory is a medicinal!

I have been so sick, and just yesterday (probably two hours before this video dropped 😂) I made a huge batch of chicken soup in the instant pot. Almost exactly like this, except it's just me and my husband, so we do two chicken thighs. Fresh herbs, carrots, lots of onion and garlic, some potatoes, and definitely cayenne and red pepper flakes. We kept it on the warm setting all day and just kept going over to get more bowls of our "medicine." ❤

I'm going to pull a chicken out of the freezer. Its time for chicken soup. I am so cold here in Michigan 😩 😅😂yes I am a born and raised Michigander. After losing weight and now in my 60s, I don't do cold!!! This video warms my soul 😊 Thanks for sharing your recipe 😀

I just want to leave this comment here cause i dont know if anyone else feels the same way; I love how your format is for cooking. It's different from other cooking videos because it's more vlog-like. INSTEAD of the cut and dry "do this - but we have already done it so you dont have to see us do it" type of videos. Like a mom teaching kids to cook rather than a teacher telling kids to cook. Not sure if im the only one that feels that way. You also make it feel more comforting. I feel like other videos make me feel overwhelmed, and you make it feel not as overwhelming. ❤️ Hope you have good holidays!

With this crazy inflation, it has been one of the most economical ways to feed my family to get the organic raw chickens from Costco, roast it for a meal and maybe left overs and immediately make a bone broth stock which I generally simmer overnight, then make a nourishing soup with whatever veggie I have in the garden/fridge. These two meals can stretch for 5ish days dinners for maybe $30-$40. Asian soups are great for sickness too, garlic and ginger is wonderful when you're under the weather.

Yummy video! I make from-scratch soup all the time! I love it because it's all in one pot, you can smell it all day while simmering on the stove, is so nutritious, uses my bacon fat (which I always use for the caramelizing), and uses leftovers out of my fridge, or little bits of veggies from the freezer that are too small for a regular meal. Who doesn't love all that?!! I love to start with caramelizing my onions with carrots and celery, too, and go from there. I love to make freezer-stored stock including those vegetables too. I don't mind them mushy and never heard complaints from anybody else either, haha. I make the stock in my blanching pot. That way, when it's simmered for hours, I just lift it out and put everything on a platter to sort out. Ta-da! I have used chicken, turkey, sausage, little inch-wide meatballs, ham, etc. And I just thicken it if I want a stew instead. Same process. So yummy! Thanks for sharing :)

I thought i had all the tricks down but you can still teach an old cook new tricks. Ive spatchcocked chickens and turkeys but never thought about it for my soups! But I do add my own bone broth so I supposed the end result would be similar. I’ve bought soup with a splash of lemon in it, even sent my husband to the local diner specifically for their homemade soup when I’ve been sick but haven’t tried it for myself. But the last tip I love, love, love, is to send it in a mason jar! I always struggle to give my big containers and worry they won’t get returned but jars are a plenty and without a label speaks homestead made! Yum! I love doing either homemade noodles wide cut or the frozen you can find. Chicken soup is best with noodles in my opinion. Just not a fan of rice in soup but love it in just about everything else. I do know gluten free folks like the rice but there are GF noodles that stand up as well. The more garlic the better when you're sick. Love fresh herbs, esp, thyme in everything and parsley

Love, love, love chicken rice (or barley) soup. I'm stingy with the broth, tho. I fill up the pot with all the other goodies, but separately cook the pasta. That preserves the broth and vegs. Just add the precooked rice to the bowl, then spoon the hot soup over top. Yummm. I also include 3 cubed potatoes with the vegetables. Hearty and delicious soup. I make beef barley soup the same way, but add a bottle of Guiness in the broth. Enjoy.

Don't forget to wash your rice to remove the excess starch :) it'll help make the rice itself taste better too. This soup looks delicious, I'll definitely be trying it out, thank you for sharing!

I spatchcocked the chicken! Now my pot is simmering for some yummy broth. I have made homemade chicken and dunkling soup before, but never spatchcocked and never added herbs. I'm very excited to add all the herbs, fresh lemon juice/zest and garlic you threw into your pot in this video. I will add dunkling drops instead the rice. This soup will be eaten on this blistery -30 windchill day and it will warm these chilly bones and heart while spending the day indoors.

That’s almost exactly how I make it! I’ve got 2 big old sage bushes outside that I always add to soups. Fresh thyme is also one of my favorites but it’s gotta be the right time of year for that. Oh and also I tend to add in some beef gelatin especially if I didn’t have time to cook the bones down.
