Chicken and Vegetable Quesadilla
Servings: 2
INGREDIENTS
2 tortillas
10 oz (283 gram) boneless chicken breast, small diced (halal)
6 oz (170 gram) Bell peppers, diced
4 oz (113 gram) onion, diced
2 cups mozzarella cheese, shredded (halal)
1 cup cheddar, shredded (halal)
2 Tbs jalapenos, sliced
1 Tbs cilantro, chopped
Seasonings for the chicken:
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika powder
1 tsp red chili powder (if you like spicy)
1 tsp cumin powder
1 tsp oregano powder
1 tsp lime juice
1 Tbs olive oil
Salt
Pepper
METHODS
Marinate the chicken with all of the seasonings above.
Tips: after marination, leave the chicken at room temperature for 15 minutes (optional)
Stir fry the chicken over a medium heat pan till cooked. Then set aside.
Sautee the diced onion and bell pepper until slightly soft while seasoning them with salt and pepper.
In a large skillet over medium heat, sprinkle olive oil. Then put the tortilla on the skillet.
Sprinkle the cheese, the sauteed vegetables, chicken, jalapeno, and cilantro over the tortilla.
Let it cook for about 2-3 minutes.
Fold over the tortilla and cook it for 1 minutes both sides (or till the tortilla turns golden brown)
Cut the quesadilla into 4 slices. Garnish with green onion.
Optional: Serve with tomato salsa and lime wedge.
Quesadilla Ayam dan Sayuran

BAHAN
2 tortilla
10 ons (283 gram) dada ayam tanpa tulang, potong dadu kecil (halal)
6 ons (170 gram) paprika, potong dadu
4 ons (113 gram) bawang bombay, potong dadu
2 cangkir keju mozzarella, parut (halal)
1 cangkir cheddar, parut (halal)
2 sdm jalapenos, iris tipis
1 sdm daun ketumbar, cincang
Bumbu untuk ayam:
1 sdt bubuk bawang putih
1 sdt bubuk bawang bombay
1 sdt bubuk paprika
1 sdt cabai merah bubuk (jika suka pedas)
1 sdt bubuk jintan
1 sdt bubuk oregano
1 sdt air jeruk nipis
1 sdm minyak zaitun
Garam
Lada
METODE
Bumbui ayam dengan semua bumbu di atas.
Tips: setelah direndam, biarkan ayam pada suhu ruangan selama 15 menit (opsional)
Tumis ayam di atas wajan dengan api sedang sampai matang. Lalu sisihkan.
Tumis bawang bombay dan paprika sampai agak empuk sambil dibumbui dengan garam dan merica.
Di Teflon, dengan api sedang, taburi minyak zaitun. Lalu taruh tortilla di atas Teflon.
Taburkan keju, tumis sayuran, ayam, jalapeno, dan daun ketumbar di atas tortilla.
Biarkan matang sekitar 2-3 menit.
Lipat tortilla dan masak selama 1 menit di kedua sisi (atau sampai tortilla berubah warna menjadi cokelat keemasan)
Potong quesadilla menjadi 4 irisan. Hiasi dengan daun bawang.
Opsional: Sajikan dengan saus tomat dan irisan jeruk nipis.
