Is it ok to make this with cooked chicken? I have several lbs of roasted chicken thighs & legs that I want to turn into a meal starter. I already have canned soup, frozen chicken pie filling, & canned chicken, so I’m looking for something different.

It looks like you could alternately add another jar of canned tomatoes or broth and turn it into a soup in the winter - garlic bread anyone? I'm going to have to use canned mushrooms, fresh are too expensive here. And I have been buying the canned every time they go on sale since I discovered Pizza Soup. My husband will eat a quart of that himself anytime.
Chicken cacciatore always brings back to mind a little story. Back in the day when I was in my late 20s (those were the days, my friend) I had my first garden ever. We lived on Puget Sound on an island on the water. Great fun. My neighbor was a character. He let his chickens run all over the place, and their favorite place was my garden. Clinton told us if we could trap them we could have them. So we made a rickety cage out of branches and fishing net propped up on a stick with a string. You know the kind, pull the string and the stick kicks out, dropping the cage and trapping the critter. We did catch all his chickens and added them to our little flock. We named our contraption, you guessed it. Chicken Catchatorium. Thank you for letting a nearly old lady ramble on. I will make this for sure. I made one batch months ago. It was pretty good. I like that you give us such variety and your cacciatore adds what mine was lacking. Good,great and better day all. Continued healing Jeni and family.
Every summer I seem to forget that I don't like tomatoes with chicken and I make Chicken Caciatore ... I will use catsup with fried chicken (don't judge me), but other wise, NO. But this looks interesting

I just canned chicken cacciatore and it didn’t have much flavor. (not this recipe) I’ve always used white cooking wine. Does the red wine give it better flavor? I had added a lot of garlic and oregano and then some thyme. I’m so disappointed! I have 11 pint jars.
OOOH that sounds so delicious! Does pork loin sound like a good change? I've never had chicken cacciatory, so don't know if pork would make a good substitute. That's what I have on hand. I never know what to do with pork loins; they seem to be so dry when canned but maybe in a sauce....
Love chicken cacciatore and never thought of canning it. Wonder if I can add dehydrated diced zucchini and summer squash? When I make spaghetti sauce, I throw in different veggies like that (even eggplant) to make it a garden blend. Thank you!

Sooo I have a weird question, do you have this in a recipe just to try? My husband is leery with some things I want to can and would like to try it first before I commit to a full canner. Thank you in advance

Made 14 pints today! had a little left over that was just enough for lunch. This is so delicious that I was hoping I'd have at least one that didn't seal to eat tomorrow. lol
I love chicken cacciatore BUT my husband used to make it with a white sauce and for the life of me I can not remember how he did it, he added all the veggies and all like you did but no tomatoes, I have searched the internet for the recipe but can not find it anywhere. He was taught how to make it by his mother. I could kick myself for not paying more attention and for not writing it down. I really enjoyed this video, thank you so much and I am going to try to make this also.
I have thighs and breast already cut up d plan to par cook and add to sauce prior to jars. I planned tomato juice instead of chick broth and diced tomatoes instead of crushed, what do you think on that.
I am adding this to my ready canned meals. I do wonder how this flavor combo would go with beef as I have some roast that I need to can up. Thank you for the video.
