Just seeing it quickly looked like chili powder or could be paprika and some chili flakes. Spices aren't gonna matter just dust it with your fav seasonings. The toasted bread cheese and veggies are what's truly gonna shine in flavor. Not the chicken.
I'm from Philly and I had many steaks from Jim's max and dalessandros but that looks better than any steak I ever had and I prefer beef instead of chicken but that looks delicious

Provolone cheese melts really well but it becomes very stringy if you try and mix it up. If you want to actually mix in the cheese I would recommend white American bc it’s melts and mixes much better. You can always melt the provolone on top to finish it if you want that flavor though.
