CHICKEN DHANSAK
Meaning of Dhansak
Dhansak is a simple preparation of Lentil(dhan)
Vegitables (Saak) Served on a bed of Caramelized Brown Rice Along with Kacumber ( a salad of finely diced cucumber, tomatoes & Onions)It is believed to have roots in Persians khoresh(stew)
The most famous of all the Parsi dishes .It is cooked along with Meat,Chicken or Simple Vegitables also .Today I am sharing my recipe of Chicken Dhansak.
Ingredients
1/4 Cup Moong Daal
1/4 Cup Malaka Masar Daal
1/4 Cup Tuvar Daal.(Mix wash & Soak all daals together & rest for 1/2 an hour .
Vegitables
2 Medium size Eggplants
1 Cup Pumpkin diced.
1 Medium Sized Potato diced.
1 Cup fresh Fenugreek cleaned,washed & Chopped.
1 Medium Sized Tomato diced.handful of fresh Coriander chopped .
500 grms Chicken (cut into 4 pieces)
2 Bigg Sp vegitable Oil
1 Bigg Sp Ghee (clarified Butter)
2 Medium Sized Onions finely chopped.
2 Tsp Ginger garlic paste.
1 Tsp Salt (or salt to taste )
1/4 Tsp Turmeric Powder.
1 Tsp Red Chili Powder ( deghi Mirch)
2 Tsp Dhansak Masala
2 Tb Sp Fresh Coriander for garnishing.
Method
Wash & Soak all dals together & rest for 1/2 an hour.
Take a pressure cooker add soaked dals to it .Also add all diced vegetables to it .Add salt turmeric powder. Add enough water pressure cook till 5 to 6 whistles. Let the pressure cool dawn .
In a separate pan heat oil & ghee together.
Add whole Spices 1 Stick of Cinamon,2 cloves & 4 green Cardamoms. Stir
Add Chopped onions & cook till golden brown. Always add 1/4 cup water to make onions more soft .
Add ginger, garlic paste cook 2 minutes. Add Chicken & cook on high flame 3 to 4 minutes .Add all powdered spices .Mix well add 3/4 cup water cover & cook on low flame 25 to 30 minutes. Stirring in between till Chicken is softly cooked .
Check dals & Vegitables. Blend it very well with blender. Add to cooked Chicken. Mix Well cover & cook on low flame for 5 minutes. Garnish with fresh Coriander. Serve hot with Caramelized brown rice. Happy Cooking ❤❤
