My enchilada sauce is truly amazing, I have been making these enchiladas for many years just like my mom taught me. The sauce is smooth and the flavor of the American cheese makes them absolutely perfect, you can use your favorite cheese, but American cheese is always my first choice because the flavor of the cheese and sauce together is hard to beat. ENCHILADA SAUCE INGREDIENTS -------
1 lb Boneless skinless chicken (3 thighs & 1 breast)
2 Tbs melted butter
1 Tbs vegetable oil
3 Tbs All Purpose Flour
1 1/2 Tbs Chili Powder
2 tsp Paprika
1 tsp garlic powder
1 tsp Onion powder
1 tsp ground cumin
1/2 tsp Mexican oregano
3 C. Chicken broth
2 tsp Tomato paste
1 1/2 tsp Chicken Bouillon (you adjust)
1/2 tsp sugar
Vegetable oil as needed to fry tortillas
10 -12 Corn tortillas
3/4 lb American cheese (or as needed)
