Ingredients
250 grams boneless chicken, cut into thin strips
4 whole wheat flour rotis
2 tbsps oil + as required
1 medium onion, sliced
¼ tsp turmeric powder
1½ tsps red chilli powder
1 tsp coriander powder
½ tsp cumin powder
3 tsps ginger-garlic paste
1 large tomato, finely chopped
Salt to taste
1½ tsps chaat masala
1 tsp dried mango powder (amchur)
½ tsp black salt
4 eggs
2-3 tbsps chopped fresh coriander leaves + to sprinkle
1 medium onion, finely chopped
Chilli vinegar to drizzle
Method
1. Heat oil in a non-stick pan. Add sliced onions and sauté till golden brown.
2. Add turmeric powder, 1 tsp chilli powder, coriander powder, cumin powder and sauté. Add ginger-garlic paste and sauté for 1 minute.
3. Add tomato, salt and mix well. Add 1 tbsp water and cook for 3-4 minutes.
4. To prepare spice mix, mix together chaat masala, dried mango powder, black salt, and remaining chilli powder in a bowl.
5. Add chicken to the pan and mix well, Cover and cook for 2-3 minutes.
6. Break eggs in a bowl, add salt and a pinch of red chilli powder and whisk well.
7. Add coriander to the chicken and mix well.
8. Heat some oil on a tawa. Add beaten eggs and place a roti on top. Cook for 30 seconds. Flip and cook for a minute more.
9. Sprinkle the prepared spice mix on top. Place a portion of chicken in the centre, sprinkle some chopped onions, coriander and drizzle chilli vinegar.
10. Sprinkle some more spice mix and roll tightly.
11. Serve.
