Chicken Kofta Kebab | Easy Recipe | ASMR 

Kofta is a family of meatball dishes found in the Indian subcontinent, Middle Eastern, and Central Asian cuisines. In the simplest form, koftas consist of balls of ground meat - usually beef, chicken, lamb or mutton, or a mixture - mixed with spices and onions.
So Kofta Kebabs are seasoned meatballs on skewers. Traditionally served with saffron rice or Naan with a side of fresh salad.
Ingredients
2 kg | boneless skinless thighs
4 | medium onions
12 | cloves of garlic
1 inch | ginger
9 | green chili
5 tsp | salt
1 Tbs | red chili flakes
¼ cup | cumin whole
¼ cup | coriander whole
¼ cup | ghee
Method
1. Grind together ginger, garlic and green chili.
2. Now grind the onions.
3. Drain all water from the onions.
4. Grind the boneless skinless chicken thigh meat. Make sure the chicken is very cold. Do not remove any fat from the chicken.
5. Mix all the ingredients together.
6. Keep mixing for at least 5 to 7 minutes.
7. Cover and refrigerate for 2 to 3 hours. This helps in marination and the mixture becomes easier to handle.
8. You can use any skewers, I used bamboo skewers, which need to be soaked.
9. Kebabs can be cooked on pan or under the grill in the oven.
10. I used a cast iron pan for stove top cooking.
11. For grilling in the oven - Broil at 550-degree Fahrenheit.
12. These kebabs can also be cooked over a coal grill or gas grill.
Saffron Rice
1. Wash Basmati rice and soak for at least 30 minutes.
2. Cook the rice with the ratio - 1 cup of rice with 1and 1/2 cup of water.
3. Add salt and butter.
4. When the water of the rice has dried up, add saffron water.
Tip: Prepackaged Cumin powder and Coriander powder can be used. But I recommend freshly grinding the cumin and coriander for much, much more flavor.
