We as kids were delighted when Mama learnt to make Chinese food.
Actually Noshi appa (my cousin) joined a cooking school and shared the recipes with Mama.
A file was made with all the recipes from the cooking classes.
Any day that file opened, it was a happy and delicious day.
Sharing a page from that file.
Step one
Chicken: 750g cut in cubes, 4 breasts
Egg whites: 3
Corn starch: 3 Tbs
Salt: 1 tsp
Mix well
Deep fry
Step two
Make manchurian sauce
Red chili powder: 1 Tbs
White vinegar: 1/2 cup
Water: 1/2 cup
Salt: 1/2 tsp
Chinese salt:1/2 tsp
Sugar: 1 tsp
Cook for 5 minutes on medium heat
Step three
Heat 3 tbs oil in a pan
Add 20 cloves of crushed garlic
Fry until light brown
Add half onion and 1 green pepper cut in squares
Now add
Salt: 1/2 tsp
Chinese salt: 1tsp
Sugar: 1tsp
Ketchup:3/4 cup
Cook
Mix together 1/4 cup of water and 1 tbs of corn starch
Add to the cooking wok
add the fried chicken
Mix well
Finish with one tsp of lemon juice
Serve with egg fried rice( recipe posted)
