2 large boneless skinless chicken, cubed up
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon of black pepper
2 tablespoons olive oil
1 tablespoon butter
1/4 chopped onion
1 cup chopped mushrooms
6 cloves of garlic, finely mined
2 tablespoons of butter
1 1/2 cup half&half or heavy whipping cream
1/2 cup freshly grated parmesan cheese
salt and pepper to taste
4 oz. soften cream cheese of blended cottage cheese
broccoli, that been steamed
Garnishes: bacon bites and more grated parmesan cheese
In a large pot add olive oil, 1 tablespoon of butter and cubed chicken with 1/4 teaspoon each of onion powder, garlic powder, and pepper and cook over medium heat till chicken is almost done. Then remove chicken with and put in a bowl and put to the side.
In the same pot add chopped mushrooms, garlic, onion and sautee till onions are tender about 3 minutes.
Now add 2 tablespoons butter to the pot, also cream cheese, half&half, parmesan cheese, salt pepper and put back in the chicken and cook on low to simmer for about 10 minutes, stirring occasionally. Simmering helps thicken the sauce.
While that's simmering I go ahead and steam my broccoli till desired doneness, thats what where gonna use for our noodles.
I also get my garnishes ready to top the bowls with.
Put some steamed broccoli in a bowl, ladle over some of your chicken mushroom Alfredo sauce, and add some garnishes of bacon bits and grated parmesan cheese and serve.
