Recipe
5 cups chicken stock (1250ml)
1 chicken breast (400g)
2 tbsp olive oil
250 g button mushrooms, quartered
2 tsp crushed garlic
¼ tsp nutmeg
½ tsp ground black pepper
1 tsp salt
20 g butter
1 small onion, finely chopped (150g)
1 cup white wine (250ml)
1¾ cups Arborio rice (360g)
¼ cup fresh cream (60g)
½ cup finely chopped parsley
½ cup grated Parmesan cheese (50g)
Instructions:
1.Cook the chicken and mushrooms: Heat olive oil in a large skillet over medium heat. Add chicken strips and cook until browned on all sides. Add sliced mushrooms and cook for 5 minutes more. Stir in minced garlic, salt, pepper, and nutmeg. Cover and cook for 10 minutes. Set aside.
2.Sauté the onion and rice: Melt butter in a large, heavy-bottomed pot over medium heat. Add chopped onion and cook until softened. Stir in Arborio rice and cook for 2 minutes, until the rice is coated in butter.
3.Add wine and stock: Pour in white wine and cook, stirring constantly, until the liquid is almost completely absorbed. Begin adding chicken stock, one ladleful at a time, stirring constantly until each addition is absorbed before adding more. This process typically takes about 20-25 minutes.
4.Combine with chicken and mushrooms: Stir in the cooked chicken and mushroom mixture into the risotto.
5.Finish with cream: Pour in the cream and cook, stirring constantly, until the risotto reaches your desired creaminess.
6.Serve: Ladle the risotto into bowls and top with grated Parmesan cheese and chopped parsley. Serve immediately.
Tips:
Sour cream or yogurt can be used instead of fresh cream.
For a richer flavour, use homemade chicken stock.
Adjust the amount of cream to your preference.
Add a squeeze of lemon juice at the end for a bright flavour.
