Join Chef Bourque as he creates a Cajun dish he enjoyed as a kid. This was when dirt roads were still in town and the water and oil trucks passed once a week to keep the dust down. This is when it was okay to live across the track and robins were okay to eat. It was a time when going to school barefooted and working in the cafeteria for your lunch was cool. Really love eating this... It's heart warming... One of the first dishes a Cajun would make for you! 😃 expect not just chicken but everything seafood, sausage, pork... Etc

+Cadie Sonnier You are right cher. My dad and uncle would get a fire going and grab the black pot and before we knew it we had a meal fit for a king. This was everyday life to us. Aieee!

Chef, the chicken sauce picante appeared to get better and better, richer and richer, as you stirred in ingredient after ingredient. Oh my, I could smell the fragrance! I knew by the expression on your face as you were tasting it that it was perfect! Thanks for teaching me a new recipe, my friend! Great job! Aieee!

This is fantastic Chef! A new dish that I never heard of before, and it looks fantastic. I really liked your comments about your dad and uncle making this outside when you were just a wee lad. What a great way to pass on bits of family, or local, history in a video like this, and history of food. I suspect its not just French that is different by where you are from. Most languages are that way, or were before the advent of TV and radio made our language more homogenized.

I made this with turtle this week, but my recipe is quite a bit different. There are a lot of varieties and most all of them are good.

I know. My old uncle and my dad each had their own way of making theirs, but they were both awesome. I ended up developing my recipe when I was very young. Cheers Steve.

I've heard and heard about sauce picante, never knew what it was and have never had it. Now I gotta try it Ted! This looks and sounds outstanding. I love that pot! I too LOVE Aunt Nellie's beets!! Thanks for sharing this recipe! Larry

***** Thanks Larry. It's one of the oldest Cajun recipes I know of. The old folks made this as much as or more then a gumbo, at least my family did. Aieee!

Do you use smoked meat with any of your main dishes? I was raised around the Ville Platte area and when my mother and Mama (grandmother) would make a chicken sauce piquant they would also fry down some smoked sausage along with the chicken. I too tried to make just a plain chicken sauce piquant, like you, with even less tomato products than you used in this video. However, I found the taste had too much tomato flavor in it. If that makes any sense. In my opinion what you made would have too much of a tomato flavor. That's in my opinion, I mean no disrespect.

+BOYBROU Thanks for the comment my friend. I learned a long time ago that every house on the bayou made gumbo different. Just as they made their sauce picante and cush-cush the way they liked it so do we. I have never made mine with smoked meat and mama and grandma made theirs just as I do, and I do believe it all depends on where you live in Louisiana as to how you prepare your food. I come from Abbeville and Scott area so it's fair to say that in VP they make their foods differently. I honor your opinion my friend. Aieee!
