Chicken STEW (green masala coconut curry)
This delicious chicken coconut stew blended and flavored with coconut, whole garam masala, green masala paste, thick coconut milk & seasoning with onion, curry leaves & black pepper, just out of this world.
500g chicken curry cut
rub salt on the chicken and leave it covered for 5 minutes, rinse under running water wash & set aside
GREEN MASALA
1/2 grated coconut
6 green chillies
2” ginger
6 garlic
1 tbsp poppy seeds
1 tsp garam masala powder
3 tbsp green stew masala powder
1/4 tsp turmeric powder
1/4 tsp cumin powder
1 tsp coriander powder
3 spring coriander leaves with stems -Add to a blender with little water and blend to a nice paste
& set aside
CHICKEN SOUP FOR STEW
-Add to a deep wide pot add 1 litre of water
-Whole garam masala:5 cloves,2” cinnamon stick, 2 bay leaves, 1 tsp fennel seeds, 2 star anise, salt to taste
-Add Cleaned chicken
-3 potatoes peel & cut into cubes
-5 green chilled
-1” ginger crushed
-5 garlic crushed/cut
-2 spring coriander leaves
-1/4 chicken stock cube
-2 tomato cut
-1/2 tsp white vinegar
-1 onion cut
-Add above ingredients bring it to a boil when the potatoes are cooked chicken is also cooked.
To check if the potatoes are cooked simply take a knife & poke one of the potato pieces
-Strain the soup keep potato & chicken separately, discard the solids
-now add to stock soup, chicken pieces green stew masala paste bring the gravy to a boil cook for 6-7 minutes
LETS GIVE TADKA
-1 small onion chopped
-Handful curry leaves
-1 table wheat flour (to thicken the gravy)
-1/2 tsp curry leaves
-2 tbsp oil, 1 tbsp ghee
-Heat oil in a pan ( low heat) add chopped onion stir and cook till golden brown
-Add wheat flour stir for a second,
(The flour added at the beginning will thicken this chicken stew )
add black pepper & curry leaves
-Turn to stew pot, add cooked potatoes then pour this tadka over the curry stir and simmer for 2-3 minutes
-Add thick coconut cream milk stir for a second, turn off the flame garnish with coriander leaves
-Enjoy with white rice, roti, neer , appam, dosa, ghee rice.
🔺🔺((Recipe for Stew Powder)
Ingredients:
4 heaped tbsp cumin seeds
250gm black peppercorns
5 inches turmeric/turmeric powder as it is difficult to grind whole turmeric)
10 cloves
2 tablespoons poppy seeds
1 tbsp coriander seeds
10" cinnamon
Method:
1. Roast seperately each of the spices in a pan, let it cool then powder in a coffee grinder.
2. Store in an airtight container. ))🔺🔺
