Chicken Stew With Dumplings.

Todays recipe for 3 adults:
Stew:
Chicken- 1 breast or 3 skinless, boneless thighs
3 medium potatoes, cubed
1 medium onion, diced
2 cloves garlic, finely diced
3-4 stalks celery, diced
1.5 cups diced carrots
1 L chicken broth
2 Tbsp butter, divided
1 Tbsp olive oil
2 Tbsp flour
Dumplings:
1.5 cups flour
1/2 tsp salt
2 tsp baking powder
3 Tbsp shortening or butter (cold)
3/4 cup milk
After the stew is 75% cooked add the dumpling batter and cook for 10 minutes without a lid and 10 minutes more with the lid on until cooked.
This chicken stew is very filling and comforting while being fairly budget friendly.
