CHICKEN TIKKA BIRIANI - IN ENGLISH

Serves 4-6
Ingredients:
1st marination
2 Pound Chicken ( 900 gms to 1 KG)
1 Tbl fresh ginger and garlic paste
½ tsp Kashmiri red chili powder
1 Tbl lemon/lime juice
2nd Marination
1 cup plain yogurt
1 Tbl fresh ginger & garlic paste
1 tsp Kashmiri red chili powder
½ tsp turmeric powder
1 tsp garam masala
½ tsp coriander powder
1 ½ Tbl Mustard Oil or (any vegetable oil)
Salt to taste
For the rice
3 Cups Basmati Rice/585 gm
1 tsp cumin seeds
2 bay leaves
5 cloves
1 cinnamon stick
5-10 Black pepper corns
4-6 whole cardamoms
Few strands saffron (Optional)
Salt to taste
1 ½ Tbl rose water (Optional)
For the Biriani Sauce
3 Tbl any cooking oil
1 cup diced onion ( 1 large onion)
1/2 tsp Kashmiri Red chili powder
½ tsp turmeric powder
1 tsp garam masala
½ tsp coriander powder
1 Tbl fresh ginger & garlic paste
1 cup diced tomato (3 medium tomatoes)
2 Tbl Plain yogurt
Salt to taste
Green chilies (Optional)
For Garnish
Fried onions
Chopped cilantro

If you dont get basmati, you can use any long grain rice. Jasmine has its own strong flavour so you will not taste the biriani flavour the way its suppose to be but if you cant get then go ahead and use jamsine

Assalam Alaykum.... First of all i want to praise your effort to make cooking easier...may the almight reward you abundantly.... I have a peace of advice concerning measurement on various recipes.... I think you should use kilograms/ litres instead of cups, bowls and jugs.... This will make learners to do the same recipe correctly as yours. Its bcoz cups/bowls may differ but kilos/litres may not..example instead of saying i use two cups for wheat flour, then say u use two kilogram of wheat flour So to make it easier for us to make the same dishes with the same taste as u demonstrate, i suggest to use the aforementioned measurement. I hope my advice will be taken. Thank you.

Aleikum Musalaam, thank you for your wonderful support. I understand your concern however I want you to understand that here in US we use cups/pounds/oz . I use cups but if you check the description box where I list the ingredients you will find that all the measurements are converted to Kilogram/grams as well simply because different countries use different measurement units and also I use cups to simplify for those who do not have weighing scales at home and those who want to cook small portions not every one cooks 1/2 kilo of rice. Actually for the rice dishes most of the times I use cups coz most rice packages sold in US, CAN, AUS,UK have measuring cups as units coz it gives the quantity of the liquid required for different type of rices and I only use one type of standard measuring cup for everything so its consistent . I hope I have justified why I do the things I do, thank you dear

How did you slow cook it at the end and what is the reason for doing so? Isn't the rice and chicken already cooked. Thank you for the videos I enjoy them very much!

I slow cook the rice by covering it well and keeping it in low heat for atleast 30 minutes. The rice is not completely cooked when you slow cook you let the steam to finish the cooking and also dry the liquid. Incase of the biriani when you slow cook you allow the chicken and the rice combine well
